Steps:
- Light charcoal briquettes in a grill and brush the grilling rack with oil to keep the salmon from sticking.
- While the grill is heating, lay the salmon skin side down on a cutting board and cut it crosswise into 4 equal pieces. Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl. Drizzle half of the marinade onto the salmon and allow it to sit for 10 minutes.
- Place the salmon skin side down on the hot grill; discard the marinade the fish was sitting in. Grill for 4 to 5 minutes, depending on the thickness of the fish. Turn carefully with a wide spatula and grill for another 4 to 5 minutes. The salmon will be slightly raw in the center, but don't worry; it will keep cooking as it sits.
- Transfer the fish to a flat plate, skin side down, and spoon the reserved marinade on top. Allow the fish to rest for 10 minutes. Remove the skin and serve warm, at room temperature, or chilled.

The Asian-style marinade adds lots of extra flavor and uses both orange & lime juices. Prep time does not include 1-hour marinating time. This was published in our local newspaper and made for lunch today! You might enjoy boiling and thickening the marinade to use as a dipping sauce. I'm also publishing the sides that were suggested - Golden Jeweled Rice and (steamed asparagus with) Citrus Sauce.

Tips:
- Choose the right salmon: Look for wild-caught salmon if possible, as it is typically lower in contaminants and has a more intense flavor. If you're using farmed salmon, choose one that is raised in a sustainable manner.
- Make sure the salmon is fresh: The flesh should be firm and pink, and the eyes should be clear. Avoid any salmon that has a slimy texture or an off odor.
- Prepare the marinade in advance: This will allow the flavors to meld and penetrate the salmon more deeply. You can marinate the salmon for up to 24 hours, but 30 minutes is usually sufficient.
- Don't overcook the salmon: Salmon is a delicate fish, so it's important to cook it carefully. The best way to tell if the salmon is done is to insert a fork into the thickest part of the fish. If the salmon flakes easily, it's done.
- Serve the salmon immediately: Grilled salmon is best served hot off the grill. You can garnish it with fresh herbs, lemon wedges, or a drizzle of olive oil.
Conclusion:
Grilled salmon with Asian citrus marinade is a delicious and healthy meal that is perfect for a weeknight dinner or a special occasion. The marinade infuses the salmon with a bright and flavorful citrus flavor, and the grilled salmon is tender and flaky. This recipe is sure to please everyone at your table.
