GRILLED SALMON IN FOIL WITH HERBY GARLIC BUTTER

Grilled Salmon in Foil With Herby Garlic Butter image

This easy grilled salmon in foil recipe is totally foolproof, resulting in flaky fish with a garlic-herb butter sauce. And did we mention cleanup is a breeze?

Provided by Rachel Gurjar

Time 36m

Yield 2 Servings

Number Of Ingredients 8

1 Tbsp. honey
1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt
1 tsp. finely grated lemon zest
6 garlic cloves, finely chopped
4 Tbsp. unsalted butter, room temperature
2 Tbsp. finely chopped dill, plus more for serving
1 (1 lb.) boneless salmon fillet, preferably skin-on
4 Tbsp. fresh lemon juice, divided

Steps:

  • Prepare a grill for medium heat. Whisk 1 Tbsp. honey, 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt, and 1 tsp. finely grated lemon zest in a small bowl to combine. Add 6 garlic cloves, finely chopped, 4 Tbsp. unsalted butter, room temperature, and 2 Tbsp. finely chopped dill and whisk again to combine (some lemon zest may remain separate and that's okay).
  • Tear off a large piece of foil according to the length and thickness of salmon (15x15" or larger) and place on a rimmed baking sheet. Place one 1 lb. boneless salmon fillet, preferably skin-on, arranging skin side down if skin is on, in center of foil (the skin will stick slightly to foil and brown while the fish cooks; you want this as it will add to the sauce). Spread garlic butter over fish, then drizzle 3 Tbsp. fresh lemon juice on top. Carefully fold one side of foil up and over fish so lemon juice stays contained, then bring other sides up to meet it and fold together to seal, leaving about a 4" opening on top for steam to escape (this will help sauce reduce a bit).
  • Place foil packet on grate and grill fish until opaque throughout and firm, 16-20 minutes. Transfer packet to a cutting board and let fish rest 5 minutes.
  • Carefully open foil packet and cut fish in half. Transfer to plates; pour juices from packet over. Drizzle fish with remaining 1 Tbsp. fresh lemon juice, dividing evenly, and top with more finely chopped dill.

MAPLE PECAN CRUSTED SALMON

Maple Pecan Crusted Salmon image

This robust dinner (or lunch!) salad is a little Southern, a little Southwestern and a lot delicious. Save time by using leftover cooked chicken from another meal or store-bought rotisserie chicken.

Yield 4-6 servings

Number Of Ingredients 10

2 tablespoons butter
1/3 cup pure maples syrup
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground mustard
1/2 cup pecans
2 - 2 1/2 pounds salmons fillets
Salt for sprinkling
Fresh lemon wedges for serving

Steps:

  • In a medium saucepan, melt the butter. Stir in the maple syrup, Worcestershire sauce, salt, pepper, and ground mustard. Stir over medium heat until the mixture is warmed through, 3-4 minutes. Remove from the heat and let cool to room temperature.
  • While the marinade is cooling, pour the pecans into a dry skillet and heat over medium heat, tossing frequently, until golden and toasted. Remove from heat; let the pecans cool to room temperature and then chop finely.
  • Place the salmon fillets in a gallon-sized ziploc bag. Pour the maple marinade over the salmon, coating the salmon pieces evenly. Seal the bag and refrigerate for 30 minutes or up to 4 hours. Preheat the oven to 325 degrees. Line a baking sheet with foil and lightly spray with nonstick cooking spray.
  • Place the toasted, chopped pecans on a plate or shallow pie dish. Remove the salmon from the refrigerator. Dip the top side of each salmon fillet in the pecan crumbs pressing the salmon lightly into the pecans so they adhere to the top of the salmon. Place the fillets pecan-side up on the prepared baking sheet.
  • Sprinkle the salmon with a pinch of salt.
  • Bake the salmon for 20-22 minutes until cooked through but still tender inside (not overcooked). The salmon should flake easily with a fork but still be soft and not dry. Serve immediately with fresh lemon wedges.

SALMON WITH SMOKED SALMON BUTTER

Salmon With Smoked Salmon Butter image

Any salmon, especially the deep red wild sockeye, will benefit from a generous dollop of this smoked salmon butter. The smoky-velvet taste lends a robust character, so little other embellishment is needed. Make it in advance and keep in the freezer, and you have an uncommonly elegant dinner in no time. The butter will lift a fillet of arctic char, butterflied trout, seasonal shad or other white-fleshed fish.

Provided by Florence Fabricant

Categories     main course

Time 20m

Yield 4 servings

Number Of Ingredients 7

1 ounce smoked salmon, preferably sockeye
6 tablespoons unsalted butter at room temperature
1 teaspoon lemon zest
1 tablespoon minced fresh dill
1 tablespoon extra-virgin olive oil
1 1/2 pounds salmon fillet with skin, in 4 equal pieces
Salt and ground black pepper

Steps:

  • Use a knife to mince smoked salmon. Place in a small bowl. Add butter and, with a fork, mash together until well combined. Add lemon zest and dill and mash in. Scoop butter onto a work surface, form into a cylinder about 2 inches in diameter, wrap in plastic and freeze. Have 4 dinner plates warming.
  • Heat a large heavy skillet, preferably cast iron, on medium-high. Add oil and brush to coat entire surface. Pat fish dry and place fillets, skin side down, in pan. Increase heat to high and cook about 3 minutes, until skin has browned. Turn the fillets and sear on high until flesh side has browned and is cooked to desired degree of doneness, another 2 to 3 minutes for medium to medium-rare.
  • While fish cooks, remove butter from freezer and slice into 4 patties. When fish is done, place a fillet, skin side down, on each dinner plate. Dust surface of fish with salt and pepper, place a portion of smoked salmon butter on top of each fillet and serve.

Tips:

  • Choose the right salmon: Look for wild-caught salmon that is firm and has a bright color. Avoid farmed salmon, which is often lower in quality and may contain contaminants.
  • Pat the salmon dry before cooking: This will help the skin crisp up and prevent the fish from sticking to the grill.
  • Season the salmon liberally: Use a combination of salt, pepper, and your favorite herbs and spices. You can also add a drizzle of olive oil to help keep the fish moist.
  • Preheat your grill to medium-high heat before cooking: This will help prevent the salmon from sticking. If your grill is too hot, the fish will cook too quickly and may burn.
  • Cook the salmon for 8-10 minutes per side, or until it is cooked through: The fish is done when it flakes easily with a fork. If you are unsure if the salmon is cooked, insert an instant-read thermometer into the thickest part of the fish. The internal temperature should read 145 degrees Fahrenheit.
  • Make the pecan butter while the salmon is cooking: This will allow the flavors to meld together. You can also make the pecan butter ahead of time and store it in the refrigerator until you are ready to use it.
  • Serve the salmon immediately with the pecan butter: The fish will be most flavorful when it is hot off the grill.

Conclusion:

Grilled salmon with pecan butter is a delicious and easy-to-make dish that is perfect for a weeknight meal. The salmon is cooked to perfection and the pecan butter adds a rich and nutty flavor. This dish is sure to be a hit with your family and friends.
