Steps:
- Preheat a grill to medium. Put the red potatoes in a large saucepan and cover with cold water by 2 inches. Bring the water to a boil over high heat. Once the water begins to boil, after about 10 minutes, add the sweet potatoes. Return to a boil and cook 10 more minutes. Drain the potatoes and set aside to cool.
- In a medium bowl, whisk the mayonnaise, mustard, onion powder, garlic powder, cayenne, and salt and black pepper to taste. When the potatoes are cool to the touch, gently toss them in the mayonnaise mixture to coat.
- Make the vinaigrette: Cook the bacon in a small skillet over medium heat until crisp, then set aside to cool in the skillet. Once cool, pour the bacon and drippings into a small bowl along with the olive oil. In a large bowl, whisk the vinegar and mustard. Slowly drizzle in the olive oil-bacon mixture, whisking to emulsify. Add the scallions, parsley, and salt and black pepper to taste and whisk to blend.
- Using tongs, place the potato pieces on the hot grill and cook on all sides long enough to cook through and make grill marks, 1 to 2 minutes per side. Handle the potatoes gently so they don't fall apart. Remove the potatoes from the grill and place in the bowl with the vinaigrette. Gently toss to coat completely and serve warm or cold.

Steps:
- Chop enough scallions (including greens) to measure about 1 1/4 cups and in a blender purée with oil and salt and pepper to taste until smooth. Pour purée through a fine sieve into a bowl, pressing hard on solids. Discard solids. Scallion oil may be made 1 day ahead and chilled, covered. Bring oil to room temperature before using.
- In a large saucepan cover potatoes with salted cold water by 1 inch and simmer until just tender, about 7 minutes. In a colander drain potatoes and rinse under cold water to stop cooking. Pat potatoes dry. Potatoes may be prepared up to this point 1 day ahead and chilled, covered. Halve potatoes lengthwise. In a bowl toss potatoes with 1 tablespoon olive oil and season with salt and pepper.
- Peel and devein shrimp. Remove tough muscle from side of each scallop if necessary. Pat shellfish dry and in a bowl toss with remaining 2 tablespoons olive oil and salt and pepper to taste.
- Prepare grill.
- Grill potatoes, cut sides down, on an oiled rack set 5 to 6 inches over glowing coals 1 to 2 minutes on each side, or until lightly charred. Grill shrimp and scallops 2 minutes on each side, or until just cooked through and golden brown. (Alternatively, sauté potatoes and shellfish in a lightly oiled non-stick skillet in batches over moderately high heat.)
- Spoon salsa onto centers of 6 plates and mound mesclun on top. Arrange shellfish and potatoes around salsa and greens (see photograph, page 72). Drizzle shellfish and potatoes with some scallion oil and drizzle greens with some coulis. Serve remaining scallion oil and coulis on the side.
GRILLED SCALLION POTATO SALAD
Potato salad often has a bit of raw onion in it to add a crisp sharp bite to the dish, but in this recipe onions and scallions are grilled. Grilling them replaces some of their intensity with a sweet-smoky char that pairs nicely with the red skinned potatoes.

AVOCADO POTATO SALAD
I got this potato salad recipe from a friend who got it from an adapted recipe from the California Avocado Commission. It's a wonderful recipe, that is lighter because the wonderful tangy dressing substitutes for mayo in most salads such as this. Lots of wonderful flavors, textures, and colors! You may serve this at room temperature, but it is best covered tightly and chilled for 1 to 3 hrs before serving. Can be prepared up to three hours in advance before serving.

SHRIMP & SCALLOPS OVER A ORANGE AVOCADO SALAD
This is by far one of my favorite salads. Warm seafood with a little spice served with a cool avocado and orange salsa over spicy arugula. A two minute dressing, quick salsa, and a five minute seafood makes for a great light dinner. I don't know about everyone else, but every now and then I love to eat a light salad for dinner, and this is perfect.

Steps:
- Scallops and Shrimp -- Bring the shrimp and scallops to room temperature Mix the lime juice, mandarin juice, red pepper, and olive in a large bowl and add the seafood, mix well so everything is combined. Only marinate 20-30 minutes.
- Dressing -- Make the dressing and set to the side. In a small bowl or measuring cup, add the mandarin orange juice, olive oil, red wine vinegar and garlic and mix well.
- Salsa -- As the dressing hangs out -- the scallops and shrimp are marinating, lets make the salsa. In a small bowl add the avocados, onion, oranges (you can cut them in half if you want, but I like them whole), and add the lime juice, salt and pepper. Nothing more. Done! Cover and set to the side. You are almost done.
- Seafood -- In a medium size pan -- I prefer NO NON STICK, Stainless or cast iron, but if non stick is all you have that is fine. Add the remaining 1 tablespoon of olive oil and the butter to the pan and bring to medium high heat. Pat your scallops dry and season with a little salt and the pepper and sear on each side just 1-2 minutes until golden brown. DO not move until golden brown. Then they will easily move. If they stick, they are not ready to be turned over. Once, golden brown on both sides, remove and set to the side while you cook the shrimp. Add the shrimp to the same pan and cook 1-2 minutes until pink and they begin to curl. They also take only a couple of minutes.
- Serve -- Toss the dressing already made with the arugula in a bowl. Don't over dress. If there is any extra dressing it is great over the seafood. I like to dress my greens very lightly. Add a couple of cups of the dressed salad to each plate. Next, Top with the avocado orange salsa and then top with the warm scallops and shrimp. Just garnish with chopped cilantro and any extra dressing if you want.
- Serve with some fresh grilled bread.

Tips:
- Choose Fresh Seafood: Always opt for fresh shellfish for the best flavor and texture. Look for shells that are tightly closed and avoid any with cracks or chips.
- Proper Grilling: Grill the seafood over medium-high heat to ensure even cooking. Avoid overcrowding the grill, as this can lead to uneven cooking.
- Enhance Flavors with Marinades and Rubs: Marinating or rubbing the seafood with herbs, spices, and citrus can infuse it with delicious flavors. Experiment with different combinations to create unique taste profiles.
- Don't Overcook: Shellfish cooks quickly, so be careful not to overcook it. Overcooked seafood becomes tough and rubbery.
- Make a Flavorful Potato Salad: The potato salad should complement the grilled seafood. Use a variety of potatoes, such as red, Yukon Gold, and fingerling, for a more interesting texture.
- Prepare a Refreshing Avocado Salsa: The avocado salsa adds a creamy and tangy element to the dish. Use ripe avocados and fresh herbs for the best flavor.
- Scallion Oil Adds Savory Touch: The scallion oil adds a subtle savory flavor to the dish. Make sure to use fresh scallions and high-quality olive oil.
- Plum Coulis for a Sweet-Tart Contrast: The plum coulis provides a sweet and tart contrast to the savory seafood and potato salad. Use ripe plums and add a touch of honey or sugar for sweetness.
- Garnish for a Colorful Presentation: Garnish the dish with fresh herbs, such as cilantro or parsley, and a squeeze of lime juice for a pop of color and extra flavor.
Conclusion:
This grilled shellfish and potato salad recipe is a delightful combination of flavors and textures. The tender grilled seafood, flavorful potato salad, refreshing avocado salsa, savory scallion oil, and sweet-tart plum coulis come together to create a memorable meal. Whether you're hosting a backyard barbecue or a special dinner party, this dish is sure to impress your guests. Don't forget to experiment with different marinades, herbs, and spices to create a unique and personalized dish that reflects your taste preferences. Enjoy!
