1 can (8 ounces) tomato sauce
1 cup chopped onion
1/2 cup water
1/4 cup packed brown sugar
1/4 cup lemon juice
3 tablespoons Worcestershire sauce
2 tablespoons canola oil
2 tablespoons prepared mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (20 ounces) unsweetened pineapple chunks
1 pound uncooked medium shrimp, peeled and deveined (about 32)
1 medium green pepper, cut into chunks
1 medium onion, cut into chunks
3 cups hot cooked rice

Steps:

  • In a large saucepan, combine the first 10 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes., Drain pineapple, reserving 2 tablespoons juice (save remaining juice for another use); set pineapple aside. Stir reserved juice into sauce. Pour half into a small bowl for basting; cover and refrigerate. Pour remaining sauce into a large resealable plastic bag; add shrimp. Seal bag and turn to coat; refrigerate for 2-3 hours., Drain and discard marinade. Alternately thread the shrimp, pineapple, green pepper and onion on eight metal or soaked wooden skewers., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill kabobs, covered, over medium heat or broil 4 in. from the heat for 5 minutes on each side or until shrimp turn pink, basting occasionally with reserved sauce. Serve with rice.

1 cup vegetable oil
3/4 cup soy sauce
1/4 cup LEA & PERRINS Worcestershire Sauce
1/4 cup MIRACLE WHIP Dipping Sauce Kickin' Onion Blossom

Steps:

  • Place all shrimp on skewers putting a little space in between; place in a resealable plastic bag. Whisk together remaining ingredients; pour over shrimp and seal. Place in refrigerator for 3-4 hours.
  • Preheat the grill for 1-2 minutes. Remove shrimp from marinade; discard marinade. Grill shrimp for about 1-2 minutes. Make sure to flip for about 30 more seconds. Serve right away or save for snacks.

I'm not suffering at all on the South Beach Diet. I've found many great recipes that fit into the plan. Dieting or not this is a great dish that brings the taste of the southwest to your grill. The shrimp is brushed with a garlic/olive oil puree, then dipped in an avocado sauce that lights up your palate. This is not time consuming, throw things in the food processor and send your better half out to grill. Then pick up a book and sip a pina colada....and wait for dinner.

skewer (wooden or metal)
2 medium ripe Hass avocadoes (sliced with skin removed)
2 tablespoons Tabasco jalapeno sauce or 2 tablespoons chipotle hot sauce (I use Tabasco Brand May use less if desired.)
seasoning salt
1 lb of peeled and deveined large shrimp
2 tablespoons olive oil
2 cloves garlic, chopped
1/2 teaspoon red pepper flakes
lime juice

Steps:

  • Mix olive oil, red pepper flakes, and garlic.
  • Process through blender or processor.
  • Set Aside.
  • Rinse out food processor or blender and add avocado, jalapeno or chipotle pepper sauce, light shake of seasoning salt, and lime.
  • Process or blend until smooth texture.
  • Set aside and refrigerate.
  • Thread shrimp on skewers and brush with garlic& olive oil mixture and lightly season with seasoning salt.
  • Grill over medium heat@ 2 1/2-3 minutes each side.
  • Serve with Avocado dipping sauce.
  • Note- do not make avocado dip too salty.
