These individually wrapped burgers are great to take along to picnics, cookouts or camping trips. The cheese is already stuffed inside, so all you need are your buns and condiments.

1 1/2 pounds ground beef
4 ounces Cheddar, cut into 16 small cubes
Kosher salt and coarsely ground black pepper
1/3 cup ketchup
2 tablespoons Worcestershire sauce
4 seeded hamburger buns, split and toasted
4 small leaves romaine lettuce
4 slices sweet onion, such as Vidalia or Maui
1 small vine-ripened tomato, sliced into 4 rounds
Potato chips or French fries, for serving

Steps:

  • 1. Preheat a grill over high heat. Divide the meat into four 6-ounce balls. Press 4 small cubes of cheese into the center of each ball and flatten into a 1/2-inch-thick patty about 4 inches in diameter, making sure the cheese stays wrapped in the meat. Sprinkle both sides of the patties evenly with 1 teaspoon salt and 1/2 teaspoon pepper. Wrap each burger in a piece of nonstick aluminum foil, twisting any excess foil at each end so the burger is wrapped in a single layer of foil only. Mix the ketchup and Worcestershire together in a small bowl.
  • 2. Grill the burgers for 5 minutes per side. Remove from the grill and carefully open up the foil packets, allowing the steam to escape. Place the opened foil packets back on the grill, add a spoonful of sauce to the top of each patty and continue to cook until the patty is cooked to at least medium to allow the cheese inside to fully melt, another 4 to 6 minutes.
  • 3. On the bottom half of each bun, spread a bit of sauce and top with a lettuce leaf, onion slice and tomato slice. Top with a patty, another spoon of the remaining sauce and the top of the bun. Serve with chips or fries.

4 teaspoons ground cumin
1 teaspoon chili powder
3/4 teaspoon garlic powder

8 slices Monterey Jack cheese

Steps:

  • Heat grill to medium heat.

2 tablespoons extra virgin olive oil
½ cup onions, sliced thick (about half an onion)
½ cup green bell pepper, sliced thick (about half a pepper)
1 small can chipotle peppers in adobo sauce, divided
¼ cup mayonnaise
4 tablespoons fresh cilantro, chopped and divided
1 pound 80/20 ground beef (we love Verde Farms Grass-Fed Beef)
½ teaspoon ground coriander
½ teaspoon ground cumin
½ teaspoon chili powder
1 large or two small tomatoes sliced into eight slices
4 slices pepper jack cheese
4 burger rolls (we used brioche burger rolls from our local supermarket but any soft burger roll will work)

Steps:

  • In a medium non-stick sauté pan, heat oil over medium high heat and add peppers and onions and sauté for about five minutes or until they start to soften up and brown slightly.
  • Remove four peppers from the can of chipotle peppers in adobo and chop then add to the cooking peppers and onions.
  • Sauté over medium heat until the vegetables are tender. As it finishes cooking, the mixture may stick a bit so add a little water and scrape the pan with a wooden spoon until finished cooking. Set aside.
  • In a small bowl mix mayonnaise with 2 tablespoons of the cilantro and one teaspoon of the adobo sauce from the can.
  • The remainder of the peppers in sauce can be frozen in a small zip lock bag for some other recipe.
  • Heat an outdoor grill to medium high heat.
  • Mix the ground beef with the remaining cilantro, coriander, cumin and chili powder and form into four patties. Brush a little oil on both sides of each patty along with salt and pepper.
  • Grill to your preferred level of doneness and top with the jack cheese.
  • To assemble, slather the prepared chipotle mayonnaise spread on the bottom half of the roll, then add two slices of tomato per sandwich.
  • Top with the burger with cooked peppers and onions and the other half of the roll.

2 lbs 73% lean ground beef, portioned in 4 oz servings
1 Tbsp Mrs. Dash Southwestern Chipotle Seasoning
1 tsp kosher salt
1 (8-oz) bag shredded Colby Jack Cheese, divided
1 cup salsa
4 large hamburger buns

Steps:

  • Preheat your grill to high. Mix beef, seasoning and salt together, in a medium bowl. Form mixture into ¼" patties. Set aside one cup of cheese for topping. Scoop 2 ounces of the remaining cheese in the center of one patty place a second patty on top. Press the two together and crimp the edges with your fingertips sealing it so the cheese does not leak out. Repeat until all burgers are prepared. Make a slight indentation in the center of the burgers to prevent it from doming up in the center. The indentation will rise as your burger cooks. Grill until golden brown and slightly charred (about 5 minutes), turning once (cook for 4 minutes on the other side for medium). Avoid pressing with a spatula, you don't want the juice or cheese to escape! Carefully add 1 tablespoon of cheese to the top of each burger for the last minute of cooking. Set burger aside and allow to rest for 5 minutes before cutting. Place buns on grill (inside down) for about 1 minute, until they are golden. Remove buns and 1 tablespoon remaining cheese on top of bottom bun, then add burger, ¼ cup salsa and top bun. Serve and enjoy!
