Four 1 1/2-pound spiny lobsters
4 tablespoons olive oil
4 tablespoons chopped fresh garlic
4 ounces chopped fresh herbs of your choice (we like to use Italian parsley, basil, thyme, tarragon and a bit of rosemary)
Kosher salt
Freshly ground black pepper
1 stick (1/4-pound) butter, cut in 8 pieces
1 cup clarified butter
4 tablespoons fresh lemon juice
8 lemon wedges

Steps:

  • Preheat oven to 450 degrees F. Preheat the grill to high.
  • Split lobsters; butterfly from the top and remove intestines. Rinse head area in cold water to remove any waste matter.
  • In a small bowl, combine 2 tablespoons olive oil, and all of the garlic and chopped herbs. Set aside.
  • Brush lobsters lightly with remaining oil and grill for approximately 5 minutes, meaty side down. Turn halfway through for grill marking and even cooking. Remove lobsters from grill, and place on a sheet pan, meaty side up. Coat with the herb and garlic mixture and season with salt and pepper. Place 2 pieces of butter on each lobster tail and put in the oven for approximately 10 minutes.
  • In a small bowl, mix the clarified butter mixed with the lemon juice. Drizzle over lobster as a sauce. Garnish with lemon wedges.

2 garlic cloves, minced
1/2 teaspoon curry powder
hot sauce, such as Frank's

Steps:

  • In a small bowl, blend together the butter, garlic, and curry powder. Add a few dashes of hot sauce and season with salt and pepper.
  • With scissors, cut down the center of the lobster tail shells on the top side and discard the dark intestinal vein. Loosen the meat from the shells and rub it with oil. Season the lobster lightly with salt and pepper. (I often don't do this step if your guests are cool).
  • Light a grill. Grill the lobster tails over a medium-hot fire, meaty side down, until light grill marks appear, about 2 minutes. Turn the lobster tails and spread each with about 1 teaspoon of the butter. Turn the lobster meaty side down again and grill until golden brown, about 2 minutes. Turn the lobster tails shell side down and splash with SoCo. Add more butter, but not all, to the lobster tails, poking it in the shell under the meat and on top and let cook until the lobster releases juice and starts simmering, about 3 minutes. The lobster tails will continue to lose translucency until a thin band remains down the center of the tails, this should take about 3 minutes longer. Just before removing from the grill, spread the tails with the remaining butter. Serve right away.

4 lobster tails (8 to 9 ounces each), thawed if frozen, or 4 Maine lobsters (1 1/4 to 1 1/2 pounds each)
4 tablespoons lard (see note)
1/2 cup shallot, finely chopped
4 scallion, both white and green parts, trimmed and finely chopped
3 cloves garlic, minced
3 tablespoons parsley, chopped fresh, Italian (flat-leaf)
2 teaspoons thyme, chopped fresh or 1 teaspoon dried
1 cup ketchup
2/3 cup water
2 tablespoons lime juice, fresh, or more to taste
1 teaspoon hot pepper sauce, preferably a scotch bonnet-based sauce such as Inner Beauty or Matouk's, or more to taste
salt and freshly ground black pepper, to taste

Melt the remaining 2 tablespoons lard in a small saucepan over low heat and brush over the cut sides of the lobster tails or lobsters.5. When ready to cook, oil the grill grate. Arrange the lobsters with the claws (if any), cut sides down, on the hot grill grate and grill for 6 to 8 minutes. Turn, using tongs, and spoon on the Creole sauce, dividing evenly. Earlier writers specify tamarind juice; more recently this has been replaced by lemon juice. For a simpler recipe, use lobster tails instead of whole lobsters and omit the first step in the method.

4 lobsters
250 ml (1 cup) Fish Stock
vegetable oil
12 pickling onions, peeled
10 ml (2 teaspoons) crushed garlic
1-2 fresh chillies, finely sliced and seeded
4-5 curry leaves
5 ml (1 teaspoon) ground cumin
5 ml (1 teaspoon) ground coriander
2 ml (1/2 teaspoon) turmeric
1 ml (1/4 teaspoon) ground cardamom
1 stick cinnamon
4 large, ripe tomatoes blanched, skinned, and chopped
lemon juice
salt, milled black pepper
60 ml (1/4 cup) plain yoghurt (optional)

Steps:

  • Kill the lobsters by plunging the tip of a large sharp knife straight down behind the lobsters' eyes. Separate tails from bodies. Wash well. Cut off fanned tail shells; set aside. Pull out the alimentary canal. Slice tails through lengthwise (first snip through the under-shell with scissors).
  • Bring the fish stock to the boil in a large saucepan, add lobster bodies and tail fans and boil for 6 minutes (no longer or you will overcook the legs). Remove from the pot. Pull off legs and claws, cover and set aside with the tail fans (they will later decorate the completed dish). Strain and retain the stock for the sauce.
  • Heat a little oil in a large saucepan and lightly cook the lobster tail pieces for about 1 minute. Set aside.
  • Lightly brown the onions and garlic in the same pot (add extra oil if necessary), then add the chilli, curry leaves, cumin, coriander, turmeric, cardamom and cinnamon. Sizzle the spices for about 30 seconds, then add the chopped tomato, lemon juice, stock and a little salt and pepper. Cover and simmer for about 10 minutes.
  • Just before serving return the lobster to the sauce and simmer for 2-3 minutes until cooked. Add the yoghurt and heat through. Tip into a warm bowl, or serve directly from the pan. Garnish with the reserved tail fans and legs, and serve with Yellow Rice and Quince Sambal.

2 teaspoons lemon juice
3 teaspoons butter
2 garlic cloves, minced
1/2 cup dry breadcrumbs
1 teaspoon salt
1/2 teaspoon ground pepper
1/4 teaspoon dried thyme
1/4 teaspoon dried marjoram
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon dried rosemary
1/4 teaspoon dried sage
1/4 teaspoon garlic powder

1 tablespoon parmesan cheese

Steps:

  • Holding each lobster tail shell side down, cut away the ribbed membrane as close to the shell as possible with kitchen shears, remove the lobster meat in one piece from each shell, and rinse and pat dry the shells.
  • Devein the pieces of lobster meat if necessary, rinse and pat them dry, and sprinkle them with the lemon juice.
  • In a small saucepan melt the butter with minced garlic and remove the pan from the heat.

  • Roll the pieces of lobster meat in the garlic butter, dredge them in the bread crumb mixture and return them to the shells.
  • Grill the lobster tails, shell sides down, on a rack set 4-6-inches over glowing coals, turning them occasionally from side to side, for 10 minutes.
  • Cover the grill and grill the lobster tails for 5-10 minutes more, or until they are just cooked through.
