4 portobello mushroom
2 scallions, white and green parts
1 1/4 pounds frozen peeled and deveined shrimp, thawed, tails removed, blotted dry
Zest of 1 lemon, finely grated
1 tablespoon lemon juice
Freshly ground black pepper
Salt
2 teaspoons rice bran oil, grapeseed oil or expeller-pressed canola oil
Lemon wedges for serving

Steps:

  • Preheat grill to medium, about 350 to 400 degrees F.
  • Rinse the tops of the mushrooms briefly under running water, rubbing off any debris, and pat dry. Gently remove the gills with a spoon (the gills are edible, but their dark shade can muck up the color of the filling). Pluck off the stems, trim the bottom of the stems, and reserve. Trim the rims of the mushrooms with kitchen shears, for a straighter edge. Reserve scraps. Place mushroom caps on a plate.
  • Slice finely slice enough of the green scallion tops to equal 2 tablespoons and reserve for garnish. Place the remaining white and green scallion parts in a large food processor and pulse to chop. Add the mushroom stems and scraps, shrimp, lemon zest and juice, and freshly ground black pepper to taste. Pulse until the shrimp is nearly ground, with some small pieces remaining.
  • Brush the mushroom tops with oil, turn them over, then sprinkle lightly with salt and pepper. Divide the shrimp mixture equally among the mushrooms and smooth with the back of a spoon. Sprinkle with salt.
  • Lightly oil the area of the grill that you will be using. Grill the stuffed mushrooms until the shrimp centers turn white and firm when pressed gently and the mushrooms are tender, about 10 to 12 minutes. Allow the mushrooms to rest a few minutes before serving. Sprinkle with sliced scallions and serve with lemon wedges.

2 tablespoons canola oil, for brushing mushrooms
1 cup pre-made pesto sauce (brand of choice)
3/4 cup grated Parmesan
1/2 cup julienned sun-dried tomatoes with oil
1/2 cup panko bread crumbs
1 cup shredded part-skim mozzarella cheese
Salt and freshly ground black pepper

Steps:

  • Preheat the grill to medium heat
  • Wipe the mushrooms with a damp paper towel to clean and dry well. Do not rinse under water. Brush the tops of the mushrooms with canola oil and set aside.
  • In a mixing bowl, mix together the pesto sauce, Parmesan, sun-dried tomatoes and the bread crumbs. Season with salt and pepper, to taste, and mix thoroughly. 1 small onion, finely chopped

Steps:

  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill.

1 package mushroom
1 package Jimmy Dean sausage (I prefer spicy)
1 egg
12 -14 individual Ritz crackers
1/2 cup finely chopped celery
1/2 cup finely chopped onion
1 teaspoon season salt
1 teaspoon black pepper
1 cup melted butter

Steps:

  • Remove the stems from the mushroom but save for stuffing.
  • Finely chop your vegetables and mushroom stems.
  • Cook sausage adding the vegetables and mushroom stems when sausage is almost done.
  • Make sure you break up your sausage finely.
  • Drain grease and allow to cool a few minutes.
  • Crush your crackers (it's easier to do while still in the wrapper) and add to sausage mixture along with 1 egg and seasoning.
  • Pack as much of the stuffing into the mushroom cap as will fit.
  • Finally, dip the bottom of the mushroom into melted butter and grill until hot.
  • Amazing outcome.

6 portobello mushrooms
1 small small yellow or red onion
1 small green pepper
1 small red or orange pepper
1/4 c blue cheese, crumbled
6 Tbsp grapeseed oil
4 Tbsp balsamic vinegar
freshly ground sea salt and pepper to taste

Steps:

  • 1. Preheat the grill to 350°F.
  • 2. Wipe the mushrooms down with a slightly damp paper towel.
  • 3. Remove the stems and set aside.
  • 4. Brush the outside of the caps with some of the oil.
  • 5. Season to taste with salt and pepper.
  • 6. Flip the mushrooms over and brush them with oil and balsamic vinegar.
  • 7. Season to taste with salt and pepper.
  • 8. Prep all of the peppers and onions by washing and slicing them into small chunks.
  • 9. Dice the leftover mushroom stems and add them to the peppers.
  • 10. Sauté the peppers, mushroom stems, and onions with 2 tbsp. of oil for about 5 to 7 minutes.
  • 11. Grill the mushrooms while the pepper mixture is cooking, gill side down for about 5 to 7 minutes.
  • 12. Mix the peppers mixture with crumbled blue cheese.
  • 13. Flip the mushrooms over and fill the caps with the peppers and cheese.
  • 14. Move them to the "off" side of the grill and bake them for 10 to 15 minutes more, until the mushroom is cooked through.

4 perfectly ripe yellow (or red) medium-size beefsteak tomatoes
1/4 cup fresh grated Parmesan cheese
1 handful mixed baby greens
Sweet Shallot Vinaigrette

Steps:

  • In a medium bowl, combine the mushrooms with the olive oil, shallots, rosemary, and thyme; let sit for about 10 minutes.
  • Light a fire in a charcoal or gas grill. Using tongs, remove the mushrooms from the marinade and grill until slightly softened and browned, about 2 minutes on each side. Set them aside. (You can also complete this step ahead of time, refrigerate the mushrooms, and then bring them to room temperature when you're ready to stuff the tomatoes.)
