Divide the mixture evenly into the 4 mushroom caps and top each with some mozzarella cheese. Put on the grill and cook until cheese is melted, about 10 minutes. Transfer to a serving dish and serve immediately.
GRILLED STUFFED PORTABELLA MUSHROOMS (VEGETARIAN)
Make these lower fat by using reduced fat sour cream and cream cheese ---to save time and to blend the flavors even more, prepare the filling in advance and chill for 8 hours or overnight --- You may use about 1/2 teaspoon dried basil or oregano in place of fresh, or just omit the herbs completely --- these are *very* good I have made them many times in the past :)

My husband who loves steak but isn't so much into mushrooms, went crazy over these - I served them with Black & Blue Steak Burgers (no bread) and a salad, all were grilled outdoors and really a fantastic meal!

Tips:
- Choose large, flat portobello mushrooms for stuffing. Smaller mushrooms will not hold as much filling.
- Remove the stems from the mushrooms and finely chop them. The stems can be added to the stuffing.
- Use a variety of vegetables in the stuffing, such as spinach, bell peppers, onions, and zucchini. This will add flavor and texture to the dish.
- Season the stuffing well with herbs and spices. This will help to enhance the flavor of the mushrooms.
- Be careful not to overstuff the mushrooms. The stuffing should be able to fit comfortably inside the mushroom caps.
- Grill the mushrooms over medium heat until they are tender and the stuffing is cooked through.
- Serve the stuffed mushrooms immediately, topped with your favorite sauce or garnish.
Conclusion:
Grilled stuffed portobello mushrooms are a delicious and versatile vegetarian dish that can be enjoyed as a main course or side dish. They are easy to make and can be tailored to your own taste preferences. With a variety of stuffing options and toppings, the possibilities are endless. So next time you are looking for a hearty and satisfying vegetarian meal, give grilled stuffed portobello mushrooms a try.
