Adapted from Vegetarian Times 2005 Grilled sweet potatoes require close attention - but the results are worth it. Slice them too thick, and they won't cook through; slice them too thin, and they will char quickly. Slice carefully and keep an eye on the grill.

4 medium sweet potatoes (about 1 pound each) peeled and cut into 1/2 inch slices
1 bunch green onions (white bulb and 3 inches of green)
1/2 cup olive oil, plus extra for brushing the potatoes and green onions
1 tablespoon Dijon mustard
1/4 cup cider vinegar
1/4 cup balsamic vinegar
1 tablespoon honey
Kosher salt and freshly ground pepper
1/4 coarsely chopped flat-leaf parsley

Tips:

  • Choose sweet potatoes that are firm and smooth, without any blemishes or bruises.

  • If you don't have a grill, you can roast the sweet potatoes in the oven at 400°F for about 30 minutes, or until tender.
  • Feel free to experiment with different herbs and spices in the dressing. Some good options include cumin, chili powder, paprika, and garlic powder.
  • For a more substantial salad, add some grilled chicken, shrimp, or tofu.
