1/2 lb Haloumi cheese, cut into 12 rectangular blocks
2 tablespoons extra-virgin olive oil
1 teaspoon dried oregano, crumbled

  • Thread 2 blocks of cheese lengthwise onto each skewer, then cover skewers with cold water and soak 1 hour.

1/4 teaspoon dried oregano
1/4 teaspoon garlic powder
6 ounces provolone cheese, thinly sliced
2 beefsteak tomatoes, sliced

  • Use a serrated knife to slice off the domed top of the baguette, removing just a half inch or so (either discard, or butter and then toast on the grill, cut into cubes, and toss into a salad). Then slice the baguette in half horizontally.

1/2 cup whole milk ricotta cheese
2 teaspoons extra virgin olive oil
1 small clove garlic (minced)
1 tablespoon chopped fresh basil (or 1 teaspoon dried)
2 teaspoons chopped fresh oregano (or 1/2 teaspoon dried)
1/4 teaspoon kosher salt
Freshly ground black pepper to taste
1/4 cup shredded Parmesan cheese
8 ounces mozzarella cheese (thinly sliced)
8 slices white bread (6 slices if your bread is on the larger side)
1 large clove garlic (peeled and halved (for rubbing on the outsides of the bread))
