2-1/2 cups all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
1 cup cold butter, cubed
6 to 8 tablespoons cold water
FILLING:
2 cups fresh or frozen sliced peaches, thawed
1-3/4 cups pitted fresh dark sweet cherries or 1 can (15 ounces) pitted dark sweet cherries, drained
1 cup fresh or frozen blueberries, thawed
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1-1/2 cups sugar
1/4 cup all-purpose flour
1/4 cup quick-cooking tapioca
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 tablespoon butter

Steps:

  • In a large bowl, mix flour, sugar and salt; cut in butter until crumbly. Gradually add water, tossing with a fork until dough holds together when pressed. Divide dough into 2 portions. Shape each into a disk; cover and refrigerate for 1 hour or overnight., In a large bowl, combine peaches, cherries, blueberries and extracts. Combine sugar, flour, tapioca, salt and nutmeg; sprinkle over fruit and gently toss to coat. Let stand for 15 minutes. , Preheat oven to 375°. On a lightly floured surface, roll half of dough to a 1/8-in.-thick circle; transfer to a 9-in. cast-iron skillet or other ovenproof skillet. Trim to 1/2 in. beyond rim of plate. Add filling; dot with butter., Roll remaining dough to a 1/8-in.-thick circle; cut into 1/2-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom crust; flute edge. Bake until crust is golden brown and filling is bubbly, 50-55 minutes. Cover edges with foil during the last 15 minutes to prevent overbrowning, if necessary. Cool on a wire rack.

½ cup packed brown sugar
1 tablespoon all-purpose flour
2 tablespoons water
1 (9 inch) pie shell
3 tablespoons all-purpose flour
3 tablespoons white sugar
2 tablespoons butter

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Wash ground cherries and place in unbaked pie shell. Mix brown sugar and 1 tablespoon flour and sprinkle over cherries. Sprinkle water over top. Mix together 3 tablespoons flour and 3 tablespoons sugar. Cut butter in until crumbly. Top cherry mixture with crumbs.

2 rolled pie crusts, store-bought or homemade
3 cups sliced peeled peaches
2 cups pitted cherries
1 1/2 cups sugar
2 tablespoons cornstarch
2 tablespoons bourbon
2 tablespoons lime zest

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-inch pie plate with one of the pie crusts.
  • In a bowl, put the peaches, cherries, sugar, cornstarch, bourbon and lime zest and stir to combine. Pour into the pie shell and top with the second crust. You can do cut-outs or a lattice top if you'd like. Trim any extra dough off the edges, then crimp the edges. Make a tent out of foil and place over the pie.

1 (15 ounce) package pastry for a double crust 9-inch pie
3 cups peeled, sliced peaches
1 cup Bing cherries, pitted and halved
1 cup blueberries
1 tablespoon lemon juice
½ cup white sugar
¼ cup brown sugar
3 tablespoons all-purpose flour
¼ teaspoon ground cinnamon
⅛ teaspoon salt
1 tablespoon milk, or as needed
1 teaspoon white sugar, or as needed

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Press one pie crust pastry into a 9-inch pie plate. Cut the remaining pie crust pastry into 3/4-inch strips to be used for the lattice top.

1/2 cup granulated sugar
1/2 cup brown sugar, packed
3/4 teaspoon almond extract
1/2 teaspoon grated nutmeg
1 dash salt
2 1/2 cups husked cape gooseberries (ground cherries)
2 tablespoons butter

Steps:

  • Line a 9" pie pan with pastry and set aside.
  • Preheat the oven to 400°.

After searching and searching, I found a few recipes for ground cherry pie. This combines the best of a few different recipes. We didn't have quite enough ground cherries to make a large pie, so I used a silicone cupcake mold and made mini pies. Delicious served alone or with icecream!

1 cup whole wheat flour
1 cup all-purpose flour
10 tablespoons unsalted butter, chilled and cut into cubes
4 -5 tablespoons ice water
1 teaspoon salt
2 1/2 cups of ground cherries, husks removed
1/2 cup sugar
2 tablespoons water
2 1/2 tablespoons flour

Steps:

  • Preheat the oven to 425 degrees.
  • For the crust: Combine flour and salt in a food processor.
  • Slowly add cubes of chilled butter.
  • Slowly add ice water until the dough forms a ball.
  • Roll out the dough for the pie crust bottom and place in a pie pan.
  • There is enough dough to make a lattice or rustic top crust.
