12 eggs
2 avocados
2 tablespoons lime juice
salt, to taste
pepper, to taste
1 tomato, diced
½ cup red onion, diced
2 tablespoons fresh cilantro
1 tablespoon garlic, minced
1 tablespoon jalapeño, minced
tortilla chip
fresh cilantro

Steps:

  • Place the eggs in a large pot and cover with 1 inch (2cm) of cold water. Cover with a lid.
  • Bring to a rolling boil, and remove from heat. Let the eggs sit, covered for 8-10 minutes.
  • Remove from water and immediately place in bath of ice water for a few minutes.
  • Remove shells and cut the egg in half, vertically.
  • Remove the yolk and place in a bowl.
  • Set the cooked whites aside on a serving tray.
  • In the bowl with the yolks, add all the ingredients for guacamole. Mash until well incorporated.
  • Spoon guacamole mixture into the bowls of the cooked egg whites.
  • Garnish with a broken piece of a tortilla chip and cilantro.

6 hard-boiled large eggs
3 tablespoons reduced-fat mayonnaise
2 tablespoons mashed avocado

Pico de Gallo or tomatoes, optional

Steps:

  • Cut eggs in half lengthwise. Remove yolks; set aside egg whites and four yolks (discard remaining yolks or save for another use)., In a large bowl, mash reserved yolks. 2 small avocados, diced
¼ cup fresh cilantro, chopped
1 g jalapeño, seeds removed and diced
½ red onion, finely chopped
1 g tomato, finely chopped
2 cloves garlic, minced
1 teaspoon cumin
1 tablespoon fresh lime juice
1 teaspoon salt
tortilla chip, crushed
fresh cilantro, for garnish

Steps:

  • Place the eggs in a pot and fill with cold water until the eggs are just covered. Bring the pot to a boil, then cover, remove from heat, and let sit for about 12 minutes.
  • Transfer the eggs to a bowl of ice water for about 3 minutes, then peel them and cut them in half. Transfer the egg yolks to a bowl, and set the cooked egg whites aside.
  • Mix the avocado, cilantro, jalapeño, red onion, tomato, garlic, cumin, lime juice, and salt with the yolks and transfer to a piping bag. (Alternatively, use a zip-top bag with a corner cut off.)

4 whole eggs in the shell
2 avocados - peeled, pitted, and mashed
1 tablespoon chopped cilantro
1 tablespoon minced green onion
2 teaspoons minced seeded jalapeno pepper
2 teaspoons fresh lime juice
½ teaspoon salt, or to taste
1 dash hot pepper sauce (e.g. Tabasco™), or to taste
1 teaspoon Worcestershire sauce, or to taste
1 teaspoon Dijon-style prepared mustard
1 pinch paprika

Steps:

  • Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, and peel. Slice eggs in half, and remove yolks to a mixing bowl.

GUACAMOLE EGG FILLING:
6 eggs, hard boiled
1/4 teaspoon purple gel food coloring in water
6 yolks of hardboiled eggs
1 avocado
Juice of one lime
1 to 2 tablespoons cilantro leaves
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper, or to taste
Salt, to taste
Blue corn chips, crushed

Steps:

  • Boil eggs. Cool under running water and refrigerate for about 4 hours or overnight. Remove eggs from the refrigerator and using the back of a spoon, tap the shells in various places. This is what gives you the spiderweb pattern. Into a large bowl and add enough water to cover the eggs and add the gel food coloring and mix well. Add eggs to colored water and Refrigerate the eggs overnight. Drain water and peel the shells to reveal the cool spidery webs of color. This is the most fun part of this recipe. The eggs are stunningly beautiful. I may never color Easter eggs the same way again. Cut eggs in half, place yolks in a food processor and continue to prepare the guacamole egg filling below. Place egg white halves in single layer in a shallow dish and refrigerate until ready to assemble. In a food processor, blend yolks, avocado, lime, and herbs and spices until very smooth. Transfer into a piping bag with a star tip and pipe into spiderweb eggs and garnish with crushed blue corn chips or red pepper flakes (not pictured) or even top with your favorite salsa for a bloody effect. Well the rest you probably can guess. Everybody loved my guacamole deviled eggs. Now they are on my table all the time for family gatherings...

5 large whole eggs, hard boiled
2 small has avacados or one large ripe avacado
1 tsp cilantro chopped fine
1 tsp green onion minced (scallion)
2 tsp jalapeno pepper (seeded & minced)
1/2 large tomato seeded and diced fine
1/2 tsp salt or to suit your taste
1 tsp dijon mustard
1 tsp worcestershire sauce or to taste
3 dash(es) louisiana hot sauce
2 pinch spanish paprika
3 Tbsp mayonaise
2 large limes, juiced
10 small capers one for each egg as garnish

Steps:

  • 1. Place the eggs in a saucepan and pour enough water to cover them. Boil the water for three minutes time it. Remove the pan from the heat and let the eggs stand in the hot water for 10 minutes covered.
  • 2. Rmove the eggs from the pan and under a stream cool water crack eggs and begin to peel them. Slice the eggs in half and remove the yolks. Place the yolks in a mixing bowl and add the avacado mash both together. Next add the cilantro, green onion, jalapeno, diced tomato, and mix gently. Pour in the lime juice, mix again and add the mayonaise, and dijon mustard. mix again
  • 3. Season with salt, Louisana hot sauce, worcestershire sauce stir well. Fill empty egg white halves with the guacamole mixture. Garnish each one with a caper. Chii in the refrigerator until serving. Remove and sprinkle with paprika. Serve cold.
  • 4. Note: above cook time should be 13 minutes. unable to put thirteen minutes in. ( 3 minutes boil time and 10 minutes setting in the hot water)
