Yield Makes 2 servings (can be doubled)

Number Of Ingredients 7

4 bacon slices, coarsely chopped
1 large onion, sliced
2 8-ounce bottles clam juice
1 12-ounce russet potato, peeled, cut into 3/4-inch pieces
3 cups (packed) thinly sliced green cabbage
1 8- to 10-ounce halibut fillet, cut into 1-inch pieces
1/2 cup half and half

Steps:

  • Sauté bacon in heavy large saucepan over medium-high heat until brown and crisp, about 3 minutes. Using slotted spoon, transfer bacon to paper towel and drain. Add onion to drippings in pan. Sauté until beginning to color, about 4 minutes. Add clam juice and potato and bring to boil. Reduce heat to medium, cover and simmer until potato is almost tender, about 8 minutes.
  • Add cabbage and fish and simmer uncovered until potato is tender, fish is just opaque in center and cabbage is wilted, about 5 minutes. Add half and half and bacon; simmer 1 minute to blend flavors. Season ragout with salt and pepper. Ladle into bowls and serve.

Tips:

  • Fresh halibut is the best choice for this recipe. If you can't find fresh halibut, you can use frozen halibut that has been thawed in the refrigerator overnight.
  • Use a good quality olive oil for this recipe. Olive oil will help to bring out the flavor of the halibut and other ingredients.
  • Don't overcrowd the pan when you are cooking the halibut. If you overcrowd the pan, the halibut will not cook evenly.
  • Cook the halibut until it is just cooked through. Overcooked halibut will be dry and tough.
  • Serve the halibut ragu over rice, pasta, or your favorite side dish.

Conclusion:

Halibut ragu is a delicious and easy-to-make dish that is perfect for a weeknight dinner. This recipe is made with fresh halibut, tomatoes, onions, garlic, and herbs. The halibut is cooked in a flavorful sauce and then served over rice or pasta. Halibut ragu is a healthy and satisfying meal that is sure to please everyone at your table.
