Yield Makes about 24 small sandwiches

Number Of Ingredients 13

For scones
4 cups all-purpose flour
2 tablespoons baking powder
1 1/2 teaspoons salt
1 stick (1/2 cup) cold unsalted butter
6 ounces coarsely grated extra-sharp Cheddar (about 1 1/2 cups)
1 cup whole milk
2/3 cup heavy cream
1 stick (1/2 cup) unsalted butter, softened
3 tablespoons coarse-grained mustard
3 tablespoons honey
6 large soft-leafed lettuce leaves such as Bibb
1/2 pound very thinly sliced cooked ham (preferably Black Forest)

Steps:

  • Preheat oven to 425°F. and butter a large baking sheet.
  • Make scones:
  • Into a large bowl sift together flour, baking powder, and salt. Cut butter into small bits and with your fingertips or a pastry blender blend into flour mixture until mixture resembles coarse meal. With a fork stir in Cheddar. Add milk and cream, stirring until just combined. Transfer mixture to a floured surface and with floured hands knead until it forms a dough. Roll out dough into a 12-inch round (about 1/2 inch thick). Using a 2-inch fluted round cutter cut out scones and arrange about 1/2 inch apart on baking sheet. Gather and gently reroll scraps. Cut out more scones and arrange on baking sheet.
  • Bake scones in middle of oven until pale golden, about 12 minutes, and transfer to a rack to cool. Scones may be made 1 day ahead and kept in an airtight container at cool room temperature.
  • In a small bowl stir together butter, mustard and honey. Tear each lettuce leaf into 4 pieces. Split scones and spread each split side with honey-mustard butter. Make sandwiches with scones, lettuce, and folded slices of ham.

HAM AND CHEDDAR CREAM SCONES

Ham and Cheddar Cream Scones image

Delicious Scones from the prestigious Culinary Institute of America. Scones aren't just for tea anymore. Like the humble all-American biscuit, they offer a satisfying addition to almost any meal. These light, flaky crumb and tender texture scones complement any dish. Scones have gone from the classic teatime essential to a trendy and sophisticated anytime snack. These are hands down the most tender and delicious scones I have ever eaten. (The scone dough must be frozen for up to 12 hours before use). For tender, flaky scones refer to these guidelines: 1. Do not over mix. If you work the dough too much, your scones will be tough and chewy. 2. Roll or pat the dough so that it is at least one-half inch thick. Thicker dough results in a better shape and lighter texture. 3. Watch the clock when baking. Like most baked goods, scones continue to bake as they cool.

  • The scones will keep for a couple days in a plastic bag or airtight container at room temperature. Toast and spread with butter or jam.
  • Preheat the oven to 325 degrees F.
  • Slice off the top of the head of garlic, drizzle with olive oil and wrap in foil. Roast for about an hour. Remove from the oven and allow the garlic to cool inside the foil. When cool, open the foil and squeeze the roasted garlic from each clove into a small bowl.

HAM, CHEESE AND ONION SCONES

Ham, Cheese and Onion Scones image

These are great light scones. This are great with dinner, as a snack or for breakfast on the run. These are so light they are pretty close to a biscuit.

Provided by Ceezie

Categories     Scones

Time 35m

Yield 8 serving(s)

Number Of Ingredients 10

1 1/2 cups flour
3/4 cup whole wheat flour
1 tablespoon baking powder
1 teaspoon garlic salt with parsley
3 tablespoons butter, grated
1/4-1/2 cup onion, chopped
1 cup cheddar cheese, grated
1 cup ham, chopped
1 1/4 cups buttermilk
1 egg

Steps:

  • Place flour, baking powder, garlic salt in mixing bowl and stir together. Grate cold butter into mixture and stir till coarse meal.
  • In a seperate bowl whisk together buttermilk and egg. Add this to the dry mixture as well as the cheese, onion and ham.Stir just till combined.
  • Place this on a floured board and knead a few times. Pat into a 1" thick shape and cut with a large cookie cutter.
  • Place on greased baking sheet or sheet lined with parchment paper. Bake at 350 degrees for 20-25 minutes.

Tips:

  • Use cold butter: Cold butter will help keep the scones flaky and tender. If you use melted butter, the scones will be more dense and dry.
  • Don't overmix the dough: Overmixing the dough will develop the gluten in the flour, which will make the scones tough. Mix the dough just until it comes together.
  • Chill the dough before baking: Chilling the dough will help it hold its shape and rise properly in the oven.
  • Bake the scones at a high temperature: A high oven temperature will help the scones rise quickly and develop a golden brown crust.
  • Serve the scones warm: Scones are best served warm out of the oven. You can also reheat them in the oven or microwave.

Conclusion:

Ham and Cheddar Scones are a delicious and versatile breakfast or brunch food. They are easy to make and can be tailored to your own preferences. By following the tips above, you can make perfect ham and Cheddar Scones every time.
