Steps:

  • Butter a 2 1/2- to 3-quart baking dish. In a large bowl, whisk together the eggs, milk, mustard, paprika, and salt.
  • Place half of the bread in the bottom of a baking dish. Top with half each of the ham, scallions, and cheese. Repeat with a second layer of the remaining ham, scallions, and cheese, pressing down as necessary to fit in the baking pan.

2½ cups milk or half-and-half
2 tsp Dijon mustard
¾ tsp salt

1 tsp dried basil
Handful cherry tomatoes, halved [optional

Steps:

  • Spray a 9 x 13 casserole with cooking spray. Melt butter in large skillet. Sauté onion and pepper and over medium-low heat until soft [about 5 minutes]. Add the spinach, cover pan, and cook until wilted, stirring occasionally. Scatter half the bread cubes in casserole. Spoon spinach mixture over bread, then sprinkle on half of the cheese and all of the ham. Scatter the rest of the bread cubes over layers and sprinkle with the rest of the cheese. 4 slice bread, cubed
2 oz cheese, cut in small cubes (i like to use swiss cheese, w/ the ham, but you can use any cheese that suits your tastebuds).
3/4 c ham, cubed
2 Tbsp butter
3 eggs
1 c milk
1/4 tsp dry mustard
1/4 tsp salt
1/2 tsp onion flakes
2 oz shredded cheddar cheese
paprika

Steps:

  • 1. Lightly grease a small baking dish, such as a 8x8" pan, or a small casserole dish. Layer half of the bread cubes on the bottom. Layer the cheese cubes and the ham over the bread. (Note: At this point, you can layer some chopped spinach over the ham/cheese, if desired ... but make SURE the spinach is well-drained, and squeezed VERY dry! Top with the remaining bread cubes. Dot with butter.)
  • 2. In a small bowl, beat together the eggs, milk, seasonings, and onion flakes.
  • 3. Pour the milk mixture over the entire bread mixture. Sprinkle shredded cheese on top. Sprinkle with paprika.
  • 4. Refrigerate overnight, or at least a couple of hours.
  • 5. Preheat oven to 375°. Bake for 45 minutes, until set. Serve hot, with a salad, if making for dinner. If you're using this for a brunch, some fresh fruit on the side is nice, like pineapple or a fresh fruit salad.
  • 6. Note: if you really like cheese, add extra. I do, and nothing's better than a "little extra cheese". :o)

10 oz sharp cheddar grated
10 oz swiss grated
6 eggs
3 cups of milk
1/2 tea. salt or onion salt
1/2 tea dry mustand
3 cups crushed corn flakes
1/2 c. melted butter

Steps:

  • This is for a big 9 x 13 pan---use a smaller pan if you have less bread (reduce everything else portionally) and don't feel confined to using a rectangular pan. Strata 20 slices bread 3 cups diced ham, canadian bacon or turkey 10 oz sharp cheddar grated 10 oz swiss grated Grease 9 x 13 in pan. Cut bread slices in half. (for fondue bread, it would be OK to just break up bread into bite size pieces. Make layers in pan BREAD then HAM then CHEESE repeat layering to make two layers Mix 6 eggs 3 cups of milk 1/2 tea. salt or onion salt 1/2 tea dry mustand (skip if you don't have this---this is not hot dog mustard) Pour over bread layers. Cover and refrigeratate overnight or for 24 hours Toss 3 cups of crushed corn flakes with 1/2 c. melted butter. Put on top of bread/cheese mixture. Bake at 375 for 50-60 minutes. Let stand 5-10 minutes before serving
