Someone once defined eternity as two people and a Christmas ham. When my husband and I received not one, not two, but three Christmas hams in one week, I came up with this recipe, which has since become one of our post-holiday favorites.

8 ounces uncooked egg noodles
1 lb diced leftover cooked ham
2 stalks celery, sliced thin
1 small onion, diced
2 tablespoons oil
1 (10 3/4 ounce) can cream of mushroom soup or 1 (10 3/4 ounce) can cream of chicken soup
1 (8 ounce) can mushroom pieces
1/2 cup chicken bouillon or 1/2 cup broth
1 cup shredded cheddar cheese
1 tablespoon Worcestershire sauce
1/2 teaspoon dried thyme
1/4 teaspoon dried marjoram
5 dashes Tabasco sauce (optional)
1/4 cup breadcrumbs
2 tablespoons melted butter or 2 tablespoons melted margarine

Steps:

  • Preheat oven to 350°F.
  • Cook noodles according to package directions.
  • Drain and pour into large mixing bowl.
  • Saute celery and onions in skillet with oil over low heat until vegetables are translucent, not browned, about 5 minutes.
  • Remove from heat and stir into cooked noodles.
  • Stir in ham, soup, mushrooms, bouillon or broth, cheese, Worcestershire sauce, thyme, marjoram and Tabasco, if using.
  • Pour mixture into an ovenproof casserole dish.
  • In a small dish, stir together melted butter or margarine and bread crumbs until well blended.
  • Sprinkle between your fingers over the surface of the casserole.
  • Bake casserole in oven preheated to 350°F for 40 minutes.

1.5 (10 3/4 ounce) cans cream of mushroom soup
1 1/4 cups sour cream
1/3 cup milk
2 cups shredded kraft Italian cheese blend (8 oz. package)
3 cups cooked ham, cubed bite-sized
1 (4 1/2 ounce) jar Green Giant sliced mushrooms, drained
1 teaspoon instant minced onion
fresh coarse ground black pepper, to taste
1 1/2 cups raw asparagus, cut into 1-inch pieces
3 cups uncooked wide or dumpling egg noodles
1 1/2-2 cups finely crushed ruffles potato chips

Steps:

  • In large bowl, mix together well the first 4 ingredients.
  • Gently fold in rest of ingredients except noodles and potato chips.
  • Cook noodles 1 minute less than shortest time on directions. *I cooked mine for 6 minutes.
  • Fold in noodles.
  • Pour/spoon into lightly greased 13x9 baking dish.
  • Top with crushed potato chips.
  • Bake in 350 oven for 35 minutes til bubbly!
  • *Do not precook asparagus.
  • **Can sub a 10 oz. box frozen chopped broccoli, thawed and drained, for the asparagus if preferred.

1 cup onion, chopped
1/2 lb wide egg noodles, cooked al dente and drained
1/2 cup sour cream
2 eggs, beaten

1/2 teaspoon caraway seed
1 pinch ground mace
1/4 teaspoon black pepper
1/4-1/2 cup milk (optional)
1/2 cup fine breadcrumbs (optional)

Steps:

  • Butter a 2-quart casserole. Preheat oven to 350 degrees F.
  • Cook the onion in the butter to soften. Add the cooked, drained noodles to the pan and stir to coat well. Add the sour cream and beaten eggs, stirring to mix. Mix in the ham, caraway seeds, mace and pepper. Add the milk to lighten the mixture, if needed.
  • Turn into prepared casserole. Top with bread crumbs, if desired, and paprika for color.

1 (8 ounce) package egg noodles
2 tablespoons butter
2 tablespoons flour
1 cup half-and-half
1 cup chicken broth
1 cup swiss cheese, grated
1 teaspoon dry mustard
salt and pepper, to taste
1 cup cooked ham, diced
1 cup frozen peas
0.5 (6 ounce) can French-fried onions

Steps:

  • Preheat oven to 325 degrees.
  • Prepare egg noodles in a large Dutch oven, boiling as described on package. Drain and return to the Dutch oven.
  • While the noodles are boiling, melt butter in skillet over medium to medium high heat. Stir in flour until thickened a bit. Slowly add half and half and chicken broth, stirring to prevent lumps. Cut heat up a bit if needed. Slowly add Swiss cheese, dry mustard and salt and pepper, stirring constantly.
  • When the sauce is medium thickness, cut heat down to low.
  • In the large Dutch oven containing the drained noodles, add the frozen peas, ham and the sauce. Mix well and pour into rectangular baking dish approximately 9 by 13.
  • Cover with French Fried onions.
  • Bake for 20 minutes.

2 c dry wide egg noodles, cooked and drained
2 Tbsp butter
2 Tbsp all purpose flour
2 eggs, separated
1 1/2 c sour cream
1/2 lb cooked ham, diced
salt and pepper, to taste
1/8 tsp ground nutmeg
1/2 c grated parmesan cheese

Steps:

  • 1. Preheat oven to 350F. Grease a 9x13 baking dish.
  • 2. In a large saucepan, melt butter and whisk in flour until smooth. Take off heat and cool slightly.
  • 3. In a medium bowl, beat egg whites until stiff peaks form.
  • 4. Add the egg yolks to the cooled butter and flour mixture. Stir in sour cream, salt, pepper and nutmeg. Combine the cooked and drained noodles and sour cream mixture. Stir in ham. Gently fold in the beaten egg whites.

1 onion, chopped
½ cup sour cream
1 (10.75 ounce) can condensed cream of chicken soup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.

8 oz egg noodles (i prefer inn maid medium)
2 c chopped cooked ham
2 c cheese, shredded (i like colby or colby jack)
1 can(s) cream of chicken soup (10 3/4 oz.)
1/2 c whole milk
1 tsp garlic
1 Tbsp onion
OPTIONAL TOPPING
1 1/2 c bread crumbs, buttered ( i use crushed butter flavored crackers/melted butter

  • 1. Gather all your ingredients together.
  • 2. Cook the noodles until almost done. (remember they will be in the oven for 30 minutes) Don't overcook them. Drain.
