1 medium yellow onion, finely diced
kosher salt
1 garlic clove, minced
1 1/2 lbs ground chuck
1 teaspoon dried oregano leaves
1/4 teaspoon cayenne pepper
fresh ground black pepper
2 tablespoons all-purpose flour
2 cups drained canned diced tomatoes
3/4 cup chicken stock
1 lb elbow macaroni
1/2 lb sharp cheddar cheese, grated
1/4 cup fresh flat leaf parsley, chopped

Steps:

  • Bring a large pot of water to a boil.
  • Saute the onion over medium heat until tender and season with salt. Add the garlic and cook for a minute longer.

1 cup chopped onion
1 garlic clove, minced
1 medium zucchini, sliced
1 cup chopped fresh mushrooms
1 cup water
2 cups spaghetti sauce
1/2 teaspoon dried basil
1/2 teaspoon sugar
oregano, just a pinch
6 ounces uncooked spaghetti, broken into 1 to 2 inch lengths
1/2 cup grated mozzarella cheese or 1/2 cheddar cheese

Steps:

  • Scramble-fry ground beef, onion and garlic in large non-stick frying pan 3-5 minutes.
