5 slices bacon
1 clove garlic, minced
1 pound ground pork
Kosher salt and freshly ground pepper
1/4 teaspoon dried rubbed sage
Freshly ground pepper
4 potato buns, split
Unsalted butter, softened, for spreading
Coleslaw, for topping

Steps:

  • Pulse the bacon and garlic in a food processor until coarsely ground.
  • Combine the ground pork, 1 teaspoon salt, 1/4 teaspoon pepper and the sage in a large bowl. Add the bacon mixture and gently mix with your hands. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the center of each with your thumb to prevent the burgers from bulging when grilled.
  • Preheat a grill to medium high. Season the patties with pepper. Grill, undisturbed, until marked on the bottom, 5 to 6 minutes. Turn and grill until the other side is marked and the patties feel firm, 4 to 6 more minutes. Meanwhile, spread the cut sides of the buns with butter and toast on the grill.
  • Serve the patties on the buns; top with coleslaw.

250g pouch mixed grains (or 250g cooked mixed grains)
500g lean turkey breast mince
2 large garlic cloves , finely grated
1 tsp coriander seeds , toasted and crushed
4 tbsp rose harissa
small bunch parsley , finely chopped
2 red peppers
150g rocket
2 tbsp rapeseed oil
1 lemon , juiced
3 cooked beetroot , grated
4 wholemeal seeded buns , toasted, to serve
1 medium courgette
½ small bunch dill , finely chopped
4 tbsp fat-free Greek yogurt
2 tbsp low-fat mayonnaise

Steps:

  • Cook the grains according to pack instructions. Leave to cool, then tip into a bowl and use your hands to mix in the turkey, garlic, coriander, harissa and parsley. Shape into four patties. Cover and chill.
  • To make the sauce, coarsely grate the courgette, discarding the seeds, then wrap in a clean cloth and squeeze out any liquid. Put in a bowl and mix with the dill, yogurt, 2 tbsp water and the mayonnaise.
  • Put the peppers on the barbecue and cook for 10-15 mins or until blistered and starting to char. Or, heat a grill to its highest setting and grill for 15-20 mins, turning halfway. Leave to cool a little, then peel and cut into strips.
  • Toss the rocket with half the oil and lemon juice.
  • Brush the burgers with the remaining oil and cook for 6 mins each side. Alternatively, heat the oil in a frying pan over a medium heat and fry for 6 mins each side. Serve with the sauce, peppers, beetroot, buns and salad so everyone can assemble their own burger.

1 -2 tablespoon harissa, more if you want it spicier
1 small red onion, very finely chopped
1 clove garlic, crushed
2 tablespoons finely chopped flat leaf parsley (or a mix of coriander and parsley)
1 tablespoon chopped chives
2 tablespoons olive oil
lemon slice, to serve

Steps:

  • In a bowl mix the sausage meat with the all the other ingredients, except the olive oil.

A good amount of harissa and lots of aromatics mixed into the burger patties, then topping them with a quick yogurt sauce made with lemon, mint and more harissa.

Nonstick cooking spray (optional)
1 pound ground turkey
2 heaping tablespoons harissa (or less, if desired)
1 small onion, grated
2 cloves garlic, minced
2 tablespoons chopped fresh herbs of your choice (I use basil)
3/4 cup panko
1 large egg (or 2 large egg whites if you prefer)
Kosher salt and freshly ground black pepper
3 or 4 burger buns
Baby spinach and sliced red onions, for serving
One 6-ounce container Greek yogurt or sheep's milk yogurt
2 teaspoons harissa
1 tablespoon grated onion
1 clove garlic, minced
1 teaspoon fresh lemon juice
1 tablespoon chopped fresh mint
Kosher salt and freshly ground black pepper

Steps:

  • Prepare the burgers: Line a baking sheet with aluminum foil or coat with cooking spray.

1 cup shelled green peas (from 1 pound in pods), or 1 cup frozen peas, thawed
Coarse salt
1/2 cup canned chickpeas, rinsed and drained
1/2 small onion, finely chopped
2 tablespoons fresh flat-leaf parsley, chopped
1 large egg, whisked
1 cup fresh breadcrumbs (from 3 to 4 slices white bread)
2 tablespoons extra-virgin olive oil
1/2 cup mayonnaise
2 tablespoons harissa
4 brioche rolls, split and toasted
1 cup mixed baby greens
1/2 English cucumber, cut into thin rounds

Steps:

  • Blanch fresh peas in a medium pot of salted boiling water until bright green and just tender, 3 to 4 minutes. Transfer to an ice-water bath and let cool completely. Drain. (If using frozen peas, skip this step.)
  • In a food processor, pulse peas and chickpeas until coarsely chopped. Transfer to a bowl and stir in onion, parsley, egg, and breadcrumbs. Season with salt. Form into 4 patties, each about 3/4 inch thick.
  • Heat oil in a large nonstick skillet over medium. Cook burgers until golden and crisp, about 4 minutes a side.
  • Stir together mayonnaise and harissa in a small bowl until combined. Spread on brioche rolls. Dividing evenly, sandwich burgers, baby greens, and cucumber; serve.

Tips:

  • To make the harissa paste from scratch, combine 2 tablespoons of ground cumin, 1 tablespoon each of sweet paprika, coriander seeds, caraway seeds, cayenne pepper, and salt, 4 cloves of garlic, 1 red bell pepper, and 1 cup of olive oil in a blender or food processor. Blend until smooth.
  • If you don't have any harissa paste, you can substitute 2 tablespoons of chili powder and 1 tablespoon of ground cumin.
  • To make the pork patties, combine 1 pound of ground pork, 1/2 cup of bread crumbs, 1/4 cup of grated onion, 1/4 cup of harissa paste, 1 egg, and 1 tablespoon of olive oil in a large bowl. Mix well and form into 4 patties.
  • You can cook the pork patties in a skillet over medium heat for about 5-7 minutes per side, or grill them on a preheated grill for about 4-5 minutes per side, or bake them in a preheated oven at 375 degrees Fahrenheit for about 20 minutes.
  • Serve the pork patties on hamburger buns with your favorite toppings, such as lettuce, tomato, onion, cheese, and harissa sauce.
