HARVARD BEETS

Harvard Beets image

I got this recipe from an old cookbook from 1952. I love harvard beets and this is my favorite beet recipe. It is fast and easy to make. In the winter time you can use a can of diced beets, if you don't have fresh available. Also sometimes I just cook the beets whole, then dice or slice them after "slipping" them in cold water. Slipping beets is a good childhood memory that me and my little sister used to share together.

Tips:

  • Choose the right beets: Look for beets that are small and firm, with no blemishes or bruises. Smaller beets tend to be more tender and flavorful.
  • Prepare the beets properly: Trim the tops and roots of the beets, leaving about 1 inch of stem. Scrub the beets well to remove any dirt or debris.
  • Cook the beets until tender: There are several ways to cook beets, including boiling, roasting, and steaming. Boiling is the most common method, and it takes about 30 minutes to cook the beets until tender. To roast the beets, preheat your oven to 400 degrees Fahrenheit and toss the beets with olive oil, salt, and pepper. Roast for about 45 minutes, or until tender. To steam the beets, place them in a steamer basket over a pot of boiling water. Cover and steam for about 15 minutes, or until tender.
  • Make the vinegar mixture: While the beets are cooking, make the vinegar mixture. In a saucepan, combine vinegar, sugar, water, and spices. Bring to a boil over medium heat, then reduce heat to low and simmer for 5 minutes. Remove from heat and let cool slightly.
  • Combine the beets and vinegar mixture: Once the beets are cooked and the vinegar mixture has cooled slightly, combine the two in a bowl. Toss to coat the beets evenly. Cover and refrigerate for at least 2 hours, or overnight.

Conclusion:

Harvard beets are a delicious and versatile dish that can be enjoyed as a side dish, salad, or appetizer. They are also a good source of vitamins and minerals, including vitamin C, potassium, and fiber. With a little planning, you can easily make this classic dish at home.
