I got this from cooks.com. I didn't see one like this on here. I made this for our new years eve breakfast and hubby and i both loved it! It was so easy to make and i loved that i made it last night and just poped it in the oven in the morning while i was making the pancakes. The only thing I would do different is to add some hot pepper sauce to the mix(it was a little bland for our taste. I would also maybe add some mushrooms. enjoy!

Tips for Making a Perfect Hash Brown Brunch Casserole:

- **Choose the Right Potatoes:** Opt for russet potatoes, as they hold their shape well and provide a crispy texture. - **Shred the Potatoes Evenly:** Use a food processor or grater to create uniform shreds. This ensures even cooking and a consistent texture throughout the casserole. - **Season Generously:** Don't be shy with the salt and pepper. Season the potatoes, cheese, and eggs liberally to enhance the overall flavor. - **Add Aromatics:** Incorporate sautéed onions, garlic, or bell peppers to add depth of flavor to the casserole. - **Use Fresh Herbs:** Fresh herbs like thyme, rosemary, or chives can elevate the taste of the casserole. Chop them finely and sprinkle them on top before baking. - **Layer Wisely:** Create distinct layers of potatoes, cheese, and eggs. This allows each component to shine and results in a visually appealing casserole. - **Bake at High Temperature:** Start by baking the casserole at a high temperature (400°F) to create a crispy top layer. Then, reduce the heat to finish cooking the casserole evenly. - **Let It Rest:** Allow the casserole to rest for a few minutes after baking. This helps it set and makes it easier to slice and serve.
