Provided by Michelle Berteig

Categories     One Dish Meal

Time 45m

Yield 3-4 serving(s)

Number Of Ingredients 8

1 large eggplants (cut into cubes with skin on) or 2 medium eggplants (cut into cubes with skin on)
1 onion, cut into slivers
2 tablespoons olive oil
1 teaspoon italian seasoning
1/2 teaspoon ground cumin
4 -5 tomatoes or 14 1/2 ounces stewed diced tomatoes
3 boneless skinless chicken breasts
2 cups chicken broth

Steps:

  • In a large skillet, heat the olive oil then add the chicken breasts. Cover and cook on medium heat until the chicken is golden brown, about 5 minutes per side.
  • Add the onions, stirring often. When the onions are soft, add the remaining ingredients.
  • Let simmer, covered, until eggplant is soft and tender. Serve alone or over a bed of rice.

Tips:

  • To ensure the chicken is cooked evenly, it's recommended to use a meat thermometer to check that it has reached an internal temperature of 165°F (74°C).
  • Feel free to adjust the amount of soy sauce and brown sugar to suit your taste preferences. For a bolder flavor, add an extra splash of soy sauce, or for a sweeter dish, increase the quantity of brown sugar.
  • If you prefer a bit of heat, consider adding a diced chili pepper or a pinch of cayenne pepper to the sauce.
  • Don't overcrowd the pan when cooking the chicken and eggplant. This will prevent them from cooking evenly and may result in soggy vegetables.
  • For a healthier version, reduce the amount of oil used in the recipe. You can also swap out the white rice for a healthier alternative like brown rice or quinoa.

Conclusion:

With its delectable blend of sweet, savory, and slightly tangy flavors, this Hawaiian Chicken and Eggplant dish promises an unforgettable culinary experience. The chicken, cooked to perfection, pairs harmoniously with the tender eggplant, creating a delightful textural contrast. The combination of soy sauce, brown sugar, and pineapple verlei a unique taste profile that will tantalize your taste buds. Whether served over fluffy rice or enjoyed on its own, this dish guarantees satisfaction with every bite. Embrace the vibrant flavors of Hawaii and incorporate this recipe into your culinary repertoire for a delightful and memorable meal.
