1 egg white
¼ cup light brown sugar
¼ teaspoon cayenne pepper
¼ teaspoon salt
2 cups coarsely chopped pecans
4 cups arugula
½ cup crumbled Gorgonzola cheese
2 teaspoons hazelnut oil

Steps:

  • Preheat an oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper.
  • Beat egg whites until foamy in a large glass or metal mixing bowl. Gradually add the sugar, continuing to beat until medium peaks form. Lift your beater or whisk straight up: the tip of the peak formed by the egg whites should curl over slightly. Fold in cayenne pepper and salt. Add the pecans and stir until coated. Spread the mixture evenly on the parchment-lined baking sheet.
  • Bake 10 minutes, then turn the pecan pieces. Bake another 10 minutes until toasted. Remove from oven and let cool about 15 minutes.

12 ounces salad greens (spring mix)
1/2 cup dried cherries
1/2 cup pecan halves
6 ounces blue cheese chunks
2 whole apples, cored and sliced very thin
1/4 cup olive oil
1 tablespoon (heaping) Dijon
1 tablespoon maple syrup
1 teaspoon apple cider vinegar (or more to taste)
Salt and freshly ground black pepper

Steps:

  • Add the greens, cherries, pecans, cheese and apples into a large salad bowl.
  • Mix the olive oil, Dijon, maple syrup and vinegar in a small jar and sprinkle with and salt and pepper. Put the lid on the jar and shake well to mix.
  • Pour a little of the salad dressing over the top of the salad and toss to combine. Taste the salad and add more dressing to taste.

8 bacon slices
5 tablespoons Sherry wine vinegar
8 cups loosely packed and trimmed watercress (about 2 large bunches)
2 heads Belgian endive, trimmed, sliced crosswise
3 ripe pears, halved, cored, thinly sliced
3/4 cup crumbled feta cheese
1/3 cup husked toasted hazelnuts, coarsely chopped

Steps:

  • Heat 1 tablespoon oil in large nonstick skillet over medium heat. Add shallots; sauté until tender and golden, about 8 minutes. Transfer to small bowl; cool. Cook bacon in same skillet until crisp. Transfer to paper towels; drain. Crumble bacon into small pieces. Whisk vinegar and remaining 1/2 cup oil in medium bowl to blend. Stir in shallots. Season dressing generously with salt and pepper.

7 cups mixed greens
6 ounces gorgonzola, crumbled
2/3 cup pecans (chopped)
2 tablespoons butter
1 tablespoon sugar
1/2 teaspoon salt
1 dash pepper
1/8 teaspoon red pepper
1 teaspoon Dijon mustard
1 teaspoon orange zest
2 teaspoons honey
2 tablespoons red wine vinegar
1/4 cup orange juice
1/4 cup hazelnut oil
1/4 cup olive oil

Steps:

  • Put all the pecan cruch ingredients into a small frypan over medium heat. Cook until sugar just caramelizes. Place on foil to cool. When cool put in a baggie to break up.
  • Mix all the ingredients for the vinegarette in a blender. I use a hand blender.
  • Toss greens with cheese, add vinegarette to taste. Sprinkle top of salad with the pecan crunch.

This endive-and-pear salad features blue cheese and lightly toasted hazelnuts is a flavorful dish full of interesting textures.

1 cup hazelnuts
1 tablespoon sherry vinegar
1 tablespoon balsamic vinegar
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
1/8 cup light olive oil
1/8 cup hazelnut oil
6 large or 8 small heads Belgian endive
4 ripe pears, such as Anjou, Bartlett, or Comice
8 ounces blue cheese

Steps:

  • Preheat oven to 350 degrees. Spread hazelnuts in a single layer on a rimmed baking sheet, and toast in the oven until skins begin to split, about 10 minutes. Remove from oven. While still warm, rub nuts vigorously with a clean kitchen towel to remove skins. Discard skins, and return nuts to baking sheet. Return to oven, and continue toasting until they are fragrant and golden, 1 minute more. Remove from oven, and let cool completely. Coarsely chop, and set aside.
  • Make the vinaigrette: Place sherry and balsamic vinegars in a small bowl, and whisk to combine. Whisk in 1/4 teaspoon salt and 1/8 teaspoon pepper. Whisking constantly, slowly pour in olive oil and then hazelnut oil in a steady stream until mixture is thick and emulsified.
  • Discard large outer leaves of endive, and separate interior leaves. Place in a large salad bowl. Quarter the pears, discarding core and seeds. Using a sharp knife, cut each quarter into 1/8-inch-thick slices, and add them to the bowl.
  • Drizzle endive and pears with half the vinaigrette, and gently toss to coat. Add toasted hazelnuts, half the cheese, and the remaining vinaigrette, and toss to combine. Add remaining 1/4 teaspoon salt and 1/8 teaspoon pepper; gently toss again. Crumble the remaining cheese on top, and serve. Alternatively, divide salad mixture among serving plates, and crumble blue cheese on top of each.

4 peaches , stoned and sliced
3 tbsp extra-virgin olive oil
2 tbsp Armagnac
250g chavroux, pant-ysgawn or another soft goat's cheese
100g lamb's lettuce
85g rocket leaves
50g skinned hazelnuts , roughly chopped
3 tbsp extra-virgin olive oil
1 tbsp sherry vinegar

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Make the dressing. Place the hazelnuts on a roasting tray and cook in the oven for 3-5 mins until golden, being careful not to burn them - they'll toast very quickly. Then tip them into a large bowl, mix in the oil and sherry vinegar, and season.
  • Place the peach slices on the roasting tray and drizzle with the olive oil and the Armagnac, and season lightly with salt and plenty of black pepper. Place the tray in the oven and roast the peaches for 5 mins to heat through.
  • Add the whole cheese to the baking tray and roast for a further 2 mins until just starting to melt. Place the lamb's lettuce and rocket in the bowl with the hazelnut dressing. Toss well. Arrange the dressed leaves on individual serving plates and top with the roasted peaches and a wedge of cheese. Drizzle over any remaining dressing and serve immediately.
