Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a small microwave-safe bowl, microwave the chocolate in 15 to 30-second intervals, stirring occasionally, until completely melted. Set aside.
  • While the chocolate cools a bit, beat the eggs thoroughly with a whisk until foamy and pale.
  • Pour in the honey and melted chocolate and whisk until fully combined.
  • Sprinkle in the whole wheat flour and salt. Fold the batter together with a spatula just until the flour disappears.

1/4 cup soy yogurt

1/4 cup flour (I use spelt flour)
1/2 cup unsweetened cocoa powder

1/8 teaspoon pumpkin pie spice

Steps:

  • Puree the tofu, yogurt, water and applesauce until smooth and fluffy. Transfer to a mixing bowl. Use a fork to vigorously mix in the sugar and vanilla.
  • Sift in flours, cocoa powder, baking powder, cinnamon, pumpkin pie spice and salt.
  • Use a spatula to mix batter until smooth. Transfer to an 8X8 greased baking pan and smooth out the top.

These are the HEALTHY brownies from Jessica Seinfeld's new book, Deceptively Delicious. She made them on Oprah last week and they looked great. The only change here is I made them with a mixture of wheat & white flour instead of oat flour and I used butter instead of trans fat free margarine as the original recipe calls for because that's what I have in my kitchen! To puree veggies, I used microwave then ran through the food processer. I would guess about 1 1/4 cups of carrots made the 1/2 cup puree and almost a whole bag of pre-washed baby spinach for the spinach puree. They are not overly sweet OR chocolatey but for being healthy, they are not bad! My 11 year old just came in and said YUM, BROWNIES!

1 tsp. good quality instant coffee granules or powder (i used taster's choice colombian)
2 tsp. vanilla extract
1/2 cup hershey's unsweetened cocoa
1/2 cup flour
1/2 tsp salt
1 tsp. cinnamon (can omit if desired)
1/4 tsp. baking powder
1 cup sugar
1 fully ripe avocado, pureed. when pureed, this has the same look and texture as butter. i use my small food processor. (don't be afraid of this! you won't taste or see it, i promise!)
2 large eggs
1/4 cup chocolate chips, optional but yummy

Steps:

  • 1. Preheat oven to 350 degrees. Grease or spray an 8x8 inch baking pan.
  • 2. In very small bowl, dissolve instant coffee in vanilla and set aside. In another bowl, whisk together cocoa, flour, cinnamon, salt and baking powder. Set aside.
  • 3. In a third bowl, combine sugar, avocado, eggs and coffee mixture. Mix with a hand mixer for 1-2 minutes. Gradually stir in by hand flour mixture and chocolate chips (if using) into egg mixture until JUST combined.
  • 4. Pour evenly into prepared pan. (Can add a few chocolate chips on top, optional.) Bake 19-23 minutes until a toothpick inserted 2" from side comes out nearly clean. Don't over bake. Cut into 16 squares and bag in ziplocks for under 100 calorie servings.
