LOW FAT APPLE BRAN MUFFINS

Low Fat Apple Bran Muffins image

I like to snack on these muffins, they're good, and they're healthy too. Add more sugar if you want it to be sweeter, since these muffins aren't very sweet. Be careful with the milk, sometimes it can be too moist, but you'll just have to bake it for a longer period of time.

Time 30m

Yield 24-14 muffins

Number Of Ingredients 13

1 1/2 cups oat bran
1/2 cup whole wheat flour
1/4 cup packed brown sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup buttermilk
1 egg
1 tablespoon grated orange rind
2 tablespoons orange juice
1 peeled and diced apple
1 cup raisins

Steps:

  • In large bowl, combine flour, sugar, oat bran, baking powder and soda, salt and cinnamon.
  • Combine buttermilk, egg, orange rind and juice in a separate bowl.
  • Stir wet ingredients into dry ingredients, mixing just until moistened.
  • Stir in apples and raisins.
  • Spoon into greased muffin tins.
  • Sprinkle with wheat germ.
  • Bake at 400 for 18-20 minutes.

Tips:

  • Use ripe apples: Riper apples are sweeter and have a more intense flavor. This will make your muffins more delicious.
  • Peel and grate the apples: This will help them distribute evenly throughout the batter and will also help them cook more quickly.
  • Use old-fashioned oats: Old-fashioned oats are less processed than instant oats and have a chewier texture. This will give your muffins a more hearty and satisfying bite.
  • Add some spices: Spices like cinnamon, nutmeg, and ginger will add extra flavor to your muffins. You can also add a pinch of salt to balance out the sweetness of the apples.
  • Don't overmix the batter: Overmixing the batter will make your muffins tough. Mix just until the ingredients are combined.
  • Bake the muffins at a high temperature: This will help them rise quickly and evenly. Bake the muffins at 400 degrees Fahrenheit for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
