2 tbsp Taco seasoning ((store-bought or home-made))
8 oz Romaine lettuce ((chopped))
1 1/3 cup Grape tomatoes ((halved))
3/4 cup Cheddar cheese ((shredded))
1 medium Avocado ((cubed))
1/2 cup Green onions ((chopped))
1/3 cup Salsa
1/3 cup Sour cream

Steps:

  • Heat oil in a skillet over high heat. Add ground beef. Stir fry, breaking up the pieces with a spatula, for about 7-10 minutes, until the beef is browned and moisture has evaporated.
  • Stir taco seasoning into the ground beef until well combined. If you like, you can also add 1/4 cup of water when adding the seasoning and let it simmer a bit.
  • Meanwhile, combine all remaining ingredients in a large bowl. Add the ground beef. Toss everything together.

1/2 cup jarred mild salsa
4 teaspoons extra virgin olive oil
juice of 1/2 lime
1 lb 93% ground turkey
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon kosher salt
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon oregano
1/2 small onion (minced)
2 tablespoons bell pepper (minced)
1/2 cup water
4 ounces canned tomato sauce (1/2 can)
6 cups chopped romaine lettuce
1 cup pico de gallo
1/2 cup shredded cheddar
4 lime wedges (for serving)
optional greek yogurt or sour cream

Steps:

  • Brown the turkey in a large skillet breaking it into smaller pieces as it cooks.
  • When no longer pink add dry seasoning and mix well.
  • Add the onion, pepper, water and tomato sauce and cover.
  • Simmer on low for about 20 minutes.
  • Divide the meat equally between the 4 meal prep containers.

2 pounds lean ground beef
1 medium onion, finely chopped
1 ½ cups low-sodium tomato juice
2 tablespoons hot pepper sauce (such as Frank's RedHot®)
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon garlic powder
1 teaspoon dried oregano
¾ teaspoon salt
½ teaspoon cayenne pepper
1 (14.5 ounce) package baked tortilla chips, or to taste
1 cup shredded reduced-fat Cheddar cheese, or to taste
⅓ head iceberg lettuce, shredded, or to taste
