1/2 pound bulk Italian sausage
1 small sweet yellow pepper, diced
1 small sweet red pepper, diced
1 teaspoon canola oil
1 to 2 garlic cloves, minced
1 can (15 ounces) crushed tomatoes
3/4 cup hot chili beans
2 tablespoons chili sauce
2 teaspoons chili powder
1 teaspoon ground cumin
Sour cream, optional

Steps:

  • In a large saucepan, saute sausage and peppers in oil until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Stir in the tomatoes, beans, chili sauce, chili powder and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes or until heated through. Serve with sour cream if desired.

3 (14.5 ounce) cans stewed tomatoes, chopped
½ cup beer
¼ teaspoon hot sauce
2 beef bouillon cubes
1 tablespoon brown sugar
½ teaspoon chili powder
½ teaspoon paprika
¼ teaspoon dried oregano
¼ teaspoon garlic powder
⅛ teaspoon cayenne pepper
1 teaspoon olive oil
½ red onion, chopped
1 pound ground chicken
¾ pound bulk Italian sausage
2 (6 ounce) cans tomato paste
1 (15 ounce) can kidney beans, rinsed and drained

Steps:

  • Combine the stewed tomatoes, beer, hot sauce, bouillon cubes, brown sugar, chili powder, paprika, oregano, garlic powder, and cayenne pepper in a slow cooker; cook on High for 1 hour.
  • Heat the olive oil in a skillet over medium heat; cook the red onion in the hot oil until tender. Stir in the ground chicken; cook and stir until completely browned. Transfer the mixture to the slow cooker and return the skillet to the heat. Fry the sausage in the reheated skillet until completely browned and crumbly; add to the slow cooker. Mix the tomato paste and kidney beans into the chili. Continue cooking on High another 2 hours. Switch the heat to Low and simmer 4 hours more.

1 pound Italian turkey sausage links, casings removed
1 medium onion, chopped
3/4 pound boneless skinless chicken thighs, cut into 3/4-inch pieces
2 cans (14-1/2 ounces each) diced tomatoes with mild green chiles, undrained
2 cans (8 ounces each) tomato sauce
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 teaspoon chili powder
1/2 teaspoon garlic powder

1 lb. lean ground beef or ground turkey
1 lb. Kielbasa sausage or turkey sausage
1 T. olive oil
1 c. onion, chopped
1 c. green pepper, diced
2 cloves garlic, minced
1 16-oz. can kidney beans, drained
1 16-oz. can stewed tomatoes, undrained
1 16-oz. can tomato sauce
2 bay leaves
1 tsp. salt
1 tsp. chili powder
1 tsp. oregano
1/3 tsp. white pepper
1/3 tsp. black pepper
1/8 tsp. cayenne
sour cream, and/or shredded cheddar cheese

Steps:

  • Saute ground beef in a large, heavy skillet, drain and set aside. Cut sausage into 1/2 inch slices then cut each slice in half. In the same pan, saute sausage until lightly browned. Set aside with the ground beef. In the same pan, saute onions and green pepper in olive oil over medium heat until soft but not brown. Add garlic and saute 2 minutes more. Add ground beef and sausage back into pan with remaining ingredients. Simmer uncovered for 1 hour. Serve with a garnish of sour cream and/or grated cheddar cheese, if desired.
