1 large yukon gold potato, peeled and cubed 3/8 inch
2 medium carrots, scrubbed and sliced 1/8-inch thick
1/2 cup cauliflower floret
2 large celery ribs, chopped
6 cups water
4 tablespoons vegetable stock base or 4 tablespoons chicken soup base
1 small sweet red pepper, seeded and diced
1 cup frozen baby peas
2 tablespoons dried dill weed
3/4 teaspoon seasoning salt

Steps:

  • In a large saucepan or cooking pot, add olive oil and butter and heat on medium-high.

1/2 pound lean ground beef (90% lean)
5 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained
1 small onion, chopped
1 celery rib, sliced
1 medium carrot, sliced
2 teaspoons reduced-sodium beef bouillon granules
1 bay leaf
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon pepper
2 cups frozen mixed vegetables
3/4 cup quick-cooking barley

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink; drain. Add the water, tomatoes, onion, celery, carrot, bouillon, bay leaf, garlic, salt, basil and pepper. Bring to a boil. Reduce heat; cover and simmer for 20 minutes., Stir in mixed vegetables and barley; return to a boil. Reduce heat; cover and simmer 10-15 minutes longer or until vegetables and barley are tender. Discard bay leaf.

1 yellow squash, thinly sliced
1 large white onion, diced
¼ pound fresh green beans, trimmed and snapped
¾ cup frozen corn kernels, thawed
1 (15 ounce) can white hominy
1 (15 ounce) can chickpeas
8 whole chicken wings, split
3 cubes chicken bouillon
5 tablespoons tomato sauce
1 tablespoon garlic powder
2 white potatoes, peeled and cubed
2 jalapeno peppers, julienned
6 ½ cups water

Steps:

  • In a large pot, combine zucchini, yellow squash, onion, green beans, corn, hominy, chickpeas, chicken, bouillon, tomato sauce, garlic powder, potatoes, jalapenos and water. Bring to a boil, reduce heat and simmer until chicken falls off the bone and flavors are well blended, 1 to 2 hours.

1 lb ground beef
1 tablespoon olive oil
2 medium white onions, chopped
2 stalks celery, chopped
2 (14 1/2 ounce) cans low sodium beef broth
3 carrots, chopped
2 tomatoes, chopped
6 new white potatoes, quartered
2 cups water
1/2 cup dry lentils, rinsed
1 (14 1/2 ounce) can green beans, undrained
2 tablespoons fennel bulbs, chopped
1/2 teaspoon red pepper flakes
1 teaspoon salt (or to taste)
1/2 teaspoon oregano
1/2 teaspoon basil

Steps:

  • Saute the onion, celery and ground beef in 1 T of Olive Oil until the beef is brown and the onion transparent. Pour off grease.
  • Add the rest of the ingredients, (use less salt if the broth is not low sodium,) cover and bring to a boil.

2 tablespoons olive oil
1 large onion, chopped
2 garlic cloves, chopped
3 celery ribs, chopped
2 tablespoons parsley, chopped
3 carrots, peeled and sliced
2 cups chopped cabbage
1 cup sliced mushrooms
1 potato, diced
1 cup green beans
salt and pepper
1/4 teaspoon rosemary
1/2 teaspoon thyme
2 1/2 quarts chicken stock or 2 1/2 quarts turkey stock
1 cup macaroni or 1 cup egg noodles
1 (12 ounce) can butter beans, drained
2 cups left over roasted turkey or 2 cups cooked chicken

  • Heat stock pot on medium heat and add the olive oil.
