HEAVENLY OATMEAL RAISIN COOKIES

Heavenly Oatmeal Raisin Cookies image

These are soft, chewy drops of heaven. They're less buttery than the recipe on the Quaker lid, so they rise more. Put them in tupperware and they stay soft forever. With chocolate chips they're really sinful. They last a day in my house.

Time 27m

Yield 15 cookies

Number Of Ingredients 12

3/4 cup unsalted butter, softened
1 cup firmly packed dark brown sugar
1/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla
1 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
2 1/2 cups quick-cooking oats
1 1/4 cups raisins
chocolate chips, make this simply divine (optional)

Steps:

  • Butter baking sheets.
  • Pre-heat oven to 350.
  • In a bowl with mixer, cream butter until fluffy.
  • Add dark brown sugar and granulated sugar.
  • Continue creaming until smooth.
  • Add eggs and vanilla, blend well.
  • Combine flour, baking soda, cinnamon and salt.
  • Add dry ingredients to sugar mixture, blend well.
  • Stir in oats and raisins, combine well.
  • Drop cookies on baking sheets (I make them rather large so they're extra chewy) Bake 12-15 minutes until light golden brown.
  • Transfer cookies to wire cooling rack immediately to cool.

Tips:

  • Use quality ingredients. Fresh, high-quality ingredients will result in better-tasting cookies. Use real butter, not margarine. Butter adds a rich flavor and texture that margarine cannot match.
  • Cream the butter and sugar until light and fluffy. This step incorporates air into the dough, resulting in lighter, crispier cookies. Be sure to cream the butter and sugar for at least 2 minutes.
  • Add the eggs one at a time. This helps to prevent the dough from curdling. Beat each egg in well before adding the next.
  • Do not overmix the dough. Overmixing will result in tough, chewy cookies. Mix the dough just until the ingredients are combined.
  • Chill the dough before baking. Chilling the dough helps to firm it up and prevent it from spreading too much. This will result in crispier cookies.
  • Bake the cookies at a high temperature. This will help to create crispy edges and a chewy center.
  • Cool the cookies completely before storing. This will help to prevent them from becoming soft and chewy.

Conclusion:

Heavenly Tea Cookies are a delicious and easy-to-make cookie that is perfect for any occasion. With their light and crispy texture and delicate tea flavor, these cookies are sure to be a hit with everyone who tries them. So next time you're looking for a sweet treat, give Heavenly Tea Cookies a try. You won't be disappointed!
