1 pound thinly sliced baby portobello mushrooms
4 tablespoons butter, divided
1 package (8 ounces) reduced-fat cream cheese
2 cups shredded Gruyere or Swiss cheese, divided
4 tablespoons minced chives, divided
1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
1 garlic clove, minced
1/8 teaspoon salt
1/8 teaspoon pepper
16 slices Texas toast
4 large eggs
2 cups 2% milk
2 tablespoons butter, melted

Steps:

  • In a large skillet, saute mushrooms in 1 tablespoon butter until tender; set aside., In a small bowl, beat the cream cheese, 1 cup Gruyere cheese, 2 tablespoons chives, tarragon, garlic, salt and pepper until blended. Spread over bread slices. Spoon mushrooms over half of the slices; place remaining bread slices over the top, spread side down., In a shallow bowl, whisk the eggs, milk and melted butter. Dip both sides of sandwiches into egg mixture., In a large skillet, toast sandwiches in remaining butter in batches for 2-3 minutes on each side or until golden brown. This toast is great to serve with soup or salad. You can use up your older loaves of bread with this recipe, as long as they're not completely dried up. Prep time does not include the 'butter softening time'.

Number Of Ingredients 7

1/4 lb butter, softened
1/4 teaspoon dried oregano
1/4 teaspoon dried rosemary
1/4 teaspoon dried thyme
2 tablespoons finely minced fresh parsley
1 loaf white bread, sliced and crusts removed
parsley or watercress leaf

Steps:

  • Cream the butter and mix in the herbs and parsley.
  • Spread butter on individual slices of bread.
  • Bread can also be cut into triangles, thin strips or different shapes with a cookie cutter.
  • Place the bread slices on an ungreased cookie sheet and bake in a preheated 250° oven for 1 hour.
  • The toast should be nicely browned before removing from the oven.
  • Serve on a platter garnished with water cress or parsley sprigs.

I got this recipe from a 1990's church cookbook. I love Blue Cheese and had to try it. The results were so good I just had to post it.

SPREAD:
1 1/4 c cottage cheese (low fat ok to use)
1 1/4 c blue cheese, crumbled (about 5 ounces)
1 large clove garlic
1 Tbsp lemon juice
2 green onions, with tops, finely chopped
1/4 c finely chopped fresh basil
2 Tbsp slivered toasted almonds
BREAD:
2 french bread baguettes, sliced into 16 pieces each
1 stick butter, melted
1/2 tsp garlic powder
1/4 tsp salt

Steps:

  • 1. SPREAD: Combine cottage cheese, blue cheese, garlic, and lemon juice in a food processor or blender. Process until smooth. Add green onions, basil, and almonds. Blend until mixed but still lumpy and not smooth. Pour dip into serving bowl and refrigerate until ready to serve.
  • 2. BREAD: Spread melted butter on both sides of bread slices. Lay on a non-stick cooking sheet. Stir together garlic powder and salt. Sprinkle on one side of buttered bread. Turn on broiler and allow it to heat up a moment. Broil bread about 6-8 inches from heating element for 30-45 minutes per side. Serve warm with Blue Cheese Herb Spread on the side.

4 ounces garlic and herb cheese (such as Boursin or Alouette) or, cream cheese, cut or crumbled into small pieces
3 tablespoons chives, chopped -- about 12 blades
Salt and black pepper
A few drops hot sauce
2 tablespoons butter or extra-virgin olive oil
4 plum or Roma tomatoes, sliced lengthwise
Smoked salmon, sliced ham or salami, chopped -- optional additions for the eggs
8 slices white, wheat, soft sliced Italian or whole grain bread
2 large cloves garlic, cracked away from skin
4 tablespoons softened salted butter
