3 cups all-purpose flour
4 teaspoons baking powder
2 tablespoons granulated sugar
3/4 teaspoons cream of tartar
1/2 teaspoon salt
3/4 cup butter, cold and cut into cubes
1 large egg
1 cup buttermilk (or whole milk)
1 cup sharp cheddar cheese, shredded
1/4 cup chopped fresh herbs, any combination, I used thyme, sage, parsley, and rosemary

Steps:

  • Preheat the oven to 450 degrees F. and grease or spray a cast-iron skillet with cooking spray.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, sugar, cream of tartar, and salt. Set aside.
  • In a separate small bowl, whisk together the egg, milk, cheddar cheese, and chopped fresh herbs. Set aside.
  • Using a fork or pastry cutter, cut the cubed cold butter into the flour mixture until it resembles a coarse meal and the butter is about the size of a pea.
  • Mix the egg mixture into the flour mixture using a wooden spoon until it comes together to form a loose dough ball.
  • Roll the dough into a ball, flour a clean work surface, and then using a rolling pin. Roll out the dough and cut the biscuits using a biscuit cutter or anything with a round shape.
  • Place the cut biscuits into the prepared pan and bake for 10 to 15 minutes, until the tops of the biscuits are golden brown.
  • Brush the tops of the biscuits with additional butter if you would like and serve immediately.

Yield Makes 20 biscuits

Number Of Ingredients 10

7 cups all-purpose flour, plus more for work surface
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon salt
1 cup (2 sticks) cold unsalted butter, cut into small pieces, plus more for baking sheet
1/2 cup cold shortening
1/2 cup minced scallions
1/4 cup minced fresh flat-leaf parsley
2 cups grated sharp cheddar cheese
1 1/2 cups buttermilk

Steps:

  • Heat oven to 425 degrees. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Using your hands or a pastry cutter, cut in butter with the dry ingredients until the mixture is coarse and crumbly. Then cut in the shortening, and mix in the scallions, parsley, and grated cheddar cheese.
  • Make a well in the center of the flour mixture, pour in buttermilk, and stir with a fork just until dough comes together. Do not overmix. Turn dough onto a lightly floured surface, and knead gently 6 to 8 times.
  • On a clean work surface, pat dough into a 1-inch-thick round. Cut out biscuits using a floured 3-inch-round biscuit cutter. Do not twist cutter. Gently re-form scraps of dough, and cut out more biscuits.
  • Transfer the biscuits to a lightly buttered or parchment-lined baking sheet, and bake until golden brown, 12 to 15 minutes, rotating baking sheet halfway through. Serve hot.

Time 35m

Yield 12-14 biscuits

Number Of Ingredients 12

Cooking spray
1 3/4 cups all-purpose flour
1 tablespoon plus 2 teaspoons baking powder
2 1/2 teaspoons sugar
1/4 teaspoon salt
3 tablespoons vegetable shortening, at room temperature
4 tablespoons cold unsalted butter, cut into 1/2-inch pieces
6 ounces grated yellow cheddar cheese (about 1 1/4 cups)
3/4 cup whole milk
3 tablespoons unsalted butter
1 clove garlic, smashed
1 teaspoon chopped fresh parsley

Steps:

  • Position a rack in the upper third of the oven and preheat to 425 degrees. Lightly mist a large baking sheet with cooking spray.
  • Make the biscuits: Pulse the flour, baking powder, sugar and salt in a food processor. Add the shortening and pulse until combined. Add the butter; pulse 4 or 5 times, or until the butter is in pea-size pieces. Add the cheese and pulse 2 or 3 times. Pour in the milk and pulse just until the mixture is moistened and forms a shaggy dough. Turn out onto a clean surface and gently knead until the dough comes together. Do not overwork the dough or the biscuits will be tough.
  • Drop the dough onto the baking sheet in scant 1/4-cup portions, 2 inches apart, and bake until golden, 15 to 20 minutes.
  • Meanwhile, make the garlic butter: Melt the butter with the garlic in a small saucepan over medium heat; cook for 1 minute. Remove from the heat and stir in the parsley. Brush the biscuits with the garlic butter and serve warm.

Tips:

  • Choose the right cheese: Sharp cheddar cheese is the classic choice for cheddar biscuits, but you can also use other types of cheese, such as mild cheddar, white cheddar, or even a combination of cheeses.
  • Use cold butter: Cold butter is essential for light and flaky biscuits. If the butter is too warm, it will melt and make the biscuits dense and greasy.
  • Don't overmix the dough: Overmixing the dough will make the biscuits tough. Mix the ingredients just until they come together, then stop.
  • Chill the dough before baking: Chilling the dough before baking helps to develop the flavor and makes the biscuits more tender.
  • Bake the biscuits in a hot oven: A hot oven is essential for light and fluffy biscuits. Preheat the oven to the temperature specified in the recipe before baking the biscuits.

Conclusion:

Herbed cheddar biscuits are a delicious and versatile side dish that can be served with a variety of meals. They are also a great snack or appetizer. With a few simple tips, you can make perfect herbed cheddar biscuits every time.
