Time 40m

Yield 2

Number Of Ingredients 8

2 (7 ounce) beef tenderloin steaks
salt and ground black pepper to taste
¼ cup butter
1 (6 ounce) can crab, drained
1 pound asparagus, tough ends snapped
1 packet dry Bearnaise sauce mix (such as Knorr®)
1 cup whole milk
½ cup butter

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Sprinkle the filets with salt and pepper.
  • In a small saucepan over low heat, melt 1/4 cup of butter; gently stir in the crab meat, and simmer while you broil the filets.
  • Broil the filets until they reach the desired stage of doneness; for medium (slightly pink in the center), broil 10 to 12 minutes on the first side and 6 minutes on the second side. Set the filets aside to rest.
  • Place a steamer insert into a skillet, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the asparagus, recover, and steam until just tender, 2 to 6 minutes depending on thickness.
  • Whisk Bearnaise sauce mix with milk in a saucepan. Add 1/2 cup of butter, and bring the sauce to a boil over medium heat, whisking constantly; reduce heat to a simmer, and whisk until sauce has thickened, about 1 minute.
  • To assemble, top each broiled filet with crab meat, then half the asparagus; spoon Bearnaise sauce to taste over the asparagus.

HEREFORD HOUSE WHISKEY STEAK

Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons vegetable oil
4 (6-ounce) filet mignons
4 ounces (1/2 cup) whiskey
1 teaspoon minced shallots
1/4 teaspoon minced fresh thyme leaves
1/4 teaspoon cracked black pepper
4 ounces (1/2 cup) veal glaze
2 ounces (1/4 cup) heavy cream
1/2 teaspoon Dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon salted butter
Salt

Steps:

  • Preheat the oven to 250 degrees F.
  • Heat oil in a large skillet over high heat. Place all 4 filets in the skillet and cook until your desired degree of doneness, turning once; the filets should have a dark brown, well-seared exterior. If the filets are well-seared but not cooked to your desired degree of doneness, then transfer the filets to the oven and cook until desired degree of doneness.
  • In the same skillet the filets were browned in, add the whiskey, shallots, thyme and cracked pepper; be careful as the whiskey will flame for 30 to 60 seconds. Reduce by half over high heat. Add the veal glaze, heavy cream, Dijon mustard, and Worcestershire sauce and reduce by half. Remove from the heat and add butter, mixing well to incorporate. Season with salt, to taste. Ladle the sauce over the steak, and serve.
  • Cook's Note: This sauce can be made without deglazing the pan to accommodate grilled steaks. Simply skip the first step of searing the steaks in the pan.

ZZ STEAK SOUP A.K.A. HEREFORD HOUSE RECIPE - (3.9/5)

ZZ Steak Soup a.k.a. Hereford House Recipe - (3.9/5) image

Provided by á-4527

Number Of Ingredients 12

6 tblsp Butter, melted
1 Onion, yellow, diced
1 c. Flour
8 oz Hamburger meat, cooked, drained
4 C. Water
3 tsp. Beef Base
2 tblsp Kitchen Bouquet
1/4 tblsp Seasoning Salt
1/8 tsp. Garlic powder
2 potatoes, cubed
1 lb Mixed vegetables, (optional)
8 oz Beef Chuck Country Ribs, cubed

Steps:

  • Place the butter in a stockpot and add the onions. Cook until onions begin to caramelize or start to brown. Add the flour and mix well. This will make a roux. Cook this while mixing for 2-3 minutes. Turn the heat down to medium. Add the cooked hamburger meat, uncooked potatoes, water, beef base, kitchen bouquet and seasoned salt. Cook for 20 minutes. Stir occasionally. Turn heat to high and let the soup come to a boil. Add the garlic powder. Continue to cook on high and continue stirring. The soup should start to thicken as it boils. If becomes too thick add a little water to it then adjust the seasonings. Once to the desired thickness and taste add the mixed vegetables to the soup. Turn heat to low and let the vegetables cook for 15 minutes. Remove the soup from the heat. Ad the cut steak to the soup and serve immediately. May refrigerate for up to 4-5 days. Enjoy

Tips:

  • For the perfect steak, use a high-quality cut of beef that is at least 1 inch thick. Ribeye, strip steak, and filet mignon are all good choices.
  • Season the steak generously with salt and pepper before cooking. This will help to enhance the flavor of the meat.
  • Cook the steak over high heat to sear the outside and create a flavorful crust. Then, reduce the heat and continue cooking until the steak reaches your desired doneness.
  • Let the steak rest for a few minutes before slicing and serving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.
  • For the crab cakes, use fresh crab meat for the best flavor. Be sure to pick through the crab meat carefully to remove any shells or cartilage.
  • Gently mix the crab meat with the other ingredients, taking care not to overmix. Overmixing will make the crab cakes tough.
  • Form the crab cakes into patties and pan-fry them over medium heat until golden brown and cooked through.
  • For the béarnaise sauce, use clarified butter for the best results. Clarified butter is butter that has had the milk solids removed, which makes it more stable and less likely to break.
  • Whisk the egg yolks, vinegar, and shallots together in a heatproof bowl set over a saucepan of simmering water. Be sure to whisk constantly to prevent the eggs from curdling.
  • Once the eggs have thickened, slowly whisk in the clarified butter until the sauce is smooth and creamy.

Conclusion:

The Hereford House Steak Oscar is a classic dish that is sure to impress your guests. The combination of tender steak, flavorful crab cakes, and rich béarnaise sauce is simply irresistible. With a little planning and effort, you can easily recreate this dish at home. So next time you're looking for a special occasion meal, give the Hereford House Steak Oscar a try. You won't be disappointed.
