In the top of a double boiler, heat 6 ounces chocolate, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm.
  • In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in 1 1/2 teaspoons vanilla. Stir in the melted chocolate. Beat in the flour mixture alternately with the sour cream. Stir in boiling water (batter will be thin). Pour batter into prepared pans.

  • Make the Chocolate Buttercream Frosting: In the top of a double boiler, heat 6 ounces chocolate, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm. In a large bowl, whip the butter for about 10 minutes until it is super fluffy, beat in egg yolk. Tips:

  • Prepare and Measure Ingredients Accurately: Proper measurements and ingredient preparation ensure consistent and successful baking outcomes. Use a kitchen scale for precise measurements, especially for dry ingredients like flour and sugar.
  • Use High-Quality Baking Chocolate: Opt for high-quality semisweet or bittersweet chocolate for a rich and intense chocolate flavor. Chop the chocolate finely for even melting and distribution throughout the batter.
  • Bloom the Cocoa Powder: For a more intense chocolate flavor, bloom the cocoa powder by whisking it together with a small amount of hot water. This enhances the chocolate's flavor and aroma.
  • Don't Overmix the Batter: Overmixing the batter can result in a dense and tough cake. Mix the ingredients until just combined, avoiding overdevelopment of the gluten in the flour.
  • Use Fresh Baking Soda: Baking soda loses its potency over time. Ensure you're using fresh baking soda for optimal leavening action and a fluffy cake.
  • Bake Cupcakes Evenly: If making cupcakes, rotate the baking pan halfway through the baking time to ensure even browning and baking.
  • Cool the Cake Completely: Allow the cake to cool completely before frosting. This helps prevent the frosting from melting and seeping into the cake, resulting in a cleaner and more stable finish.

Conclusion:

Hershey's Extreme Chocolate Cake is a decadent and indulgent treat for chocolate lovers. With its moist and rich crumb, intense chocolate flavor, and fluffy frosting, it's a perfect choice for special occasions or simply satisfying your sweet cravings. By following the tips and instructions provided in the recipe, you can create a stunning and delicious cake that is sure to impress your family and friends. Remember to use high-quality ingredients, measure accurately, and bake with love for the best possible outcome. Happy baking!
