I have tried and tasted so many hobnob recipes and have never been satisfied with the results, so I decided it was time to recreate my own. I have experimented so many times, changing ingredients/method, never giving up. I hope you enjoy these as much as I do.

Yield Makes 16

Number Of Ingredients 6

75g butter or margarine
75g Caster Sugar
1/2 tbsp Golden Syrup
75g Wholemeal Flour
150g Oats
1/2 tsp Bicarbonate of Soda

Steps:

  • Preheat the oven to 180°C/160°C fan. Line two large baking sheets with parchment paper.
  • Beat together the butter and sugar until light and fluffy. Add syrup and mix well.
  • Combine the flour, oats and bicarbonate of soda in a separate bowl. Add to the wet mixture a bit at a time, ensuring you mix well to incorporate all the ingredients together. It should be crumbly at this stage.
  • Place a 6.5cm cookie cutter onto one of the baking sheets, using a desert spoon, place a spoonful of the mixture into the cookie cutter and compress down as much as you can. Repeat until mixture is all used up.
  • Bake in the oven for10 minutes or until golden brown. Allow to cool completely on the baking sheets.

Hob nobs are a crispy biscuits here in Scotland. I think you would call them cookies in the USA you can't just eat one you alway's want an other so try them at your peril. This is not my recipe a friend gave it to me as I was making biscuits for a charity event. Honey can be used rather than Golden syrup.

Yield 25-30 cookies

Number Of Ingredients 7

225 g self rising flour
225 g white sugar
225 g quick-cooking rolled oats
225 g butter
1 tablespoon syrup or 1 tablespoon honey
1 tablespoon hot water
1/2 teaspoon bicarbonate of soda

Steps:

  • Turn on oven to 180c.
  • Mix all dry ingredients in a bowl.
  • Melt butter syrup and water very gently don't let it get to hot.
  • Pour onto the dry ingredients.
  • Mix well and form into balls about 25g each.
  • Place on a cookie sheet covered with non stick baking paper.
  • Bake for 15 minutes.
  • Leave for a minute on the cookie sheet then cool on a wire rack.
  • Enjoy.

100g porridge oats
50g plain flour
50g wholemeal flour
100g golden caster sugar
100g butter
1tbsp golden syrup
1tsp bicarbonate of soda mixed with 2tbsps boiling water

Steps:

  • Preheat the oven to 180°C/356°F/Gas Mark 4 and butter two large baking sheets.
  • Place the oats, flour and sugar into a large mixing bowl and make a 'well' in the middle.
  • Melt the butter in a small pan over a gentle heat. Once melted, stir in the golden syrup and the bicarbonate of soda until combined.
  • Pour the butter and syrup mixture into the bowl containing the dried ingredients and mix well to incorporate all the ingredients together.
  • Put dessertspoonfuls of the mixture on to the prepared baking sheets, an inch or so apart to allow for spreading.
  • Bake in batches for 8-10 minutes until golden in colour.
  • Allow to cool for 5-10 minutes on the trays then transfer to a wire rack to cool completely.

2 cups porridge oats
2 cups butter
1 tablespoon honey

  • Pre heat oven to 355 degrees.
  • Mix flour, oats and sugar together in a large mixing bowl.
  • Melt the butter, honey and water in a pan, once melted stir in the baking soda.
  • Add the butter mixture to the dry ingredients, and mix until combined.
  • Roll into 1.5" balls.
  • Place it on a greased tray and flatten slightly with the bottom of a cup or other flat surface.
  • Bake for about 12 mins - they should be golden, not brown.
