1 1/2 - 2 pound chicken drumsticks
1/2 cup hoisin sauce
2 stalks scallions (roughly chopped)
2 cloves garlic
1 thumb size ginger (peeled and roughly chopped)
1 tablespoon sriracha sauce
juice of 1 lime
1 1/2 tablespoon rice wine vinegar
1/4 cup rice wine vinegar
1 tablespoon granulated sugar
1/2 teaspoon kosher salt
1 English cucumber (finely sliced)
1 shallot (finely sliced)
1/4 cup cilantro

Steps:

  • Preheat oven to 375ºF.
  • Put chicken drumsticks in a large bowl and season with salt and pepper.
  • Put hoisin sauce, scallions, garlic, ginger, sriracha sauce, lime juice and rice wine vinegar in a blender and blend until smooth. Pour half of the sauce on top of the drumsticks and reserve the other half for later.
  • Let the chicken marinade for 20 minutes.
  • Line a cooking tray with non stick foil and lay chicken drumsticks on top. Brush sauce on top (from the marinade, NOT the reserved sauce) and bake for 15 minutes. Take the tray out of the oven, turn the drumsticks over and brush with sauce again. Bake for another 15 minutes.
  • Turn the oven to broil, brush a little more sauce on the chicken and broil on each side for 3-5 minutes, until the skin is golden brown. Alternatively, you can transfer the chicken drumsticks on to a grill pan and grill each side for a few minutes, until charred marks appear.

2 teaspoons packed light brown sugar
1 1/2 teaspoons five-spice powder

2 chicken halves (3 1/2 to 4 pounds total)

1 teaspoon grated garlic
1/4 cup hoisin sauce
2 tablespoons rice vinegar (not seasoned)
3 1/2 teaspoons honey
1 1/4 teaspoons sesame oil
6 small cucumbers, cut into 2-inch spears

Steps:

  • Prepare a grill for indirect heat: For gas, preheat to medium high, then turn off the burners on one side and turn the other burners to medium low. For charcoal, once the coals ash over, push them to one side.
  • Mix 2 teaspoons vegetable oil, the brown sugar, 1 teaspoon five-spice powder, 1 teaspoon salt and 1/4 teaspoon pepper in a bowl. Rub on the chicken. Grill skin-side down over direct heat until marked, about 5 minutes. Flip and move to the cooler side of the grill; cover and cook until a thermometer registers 165 degrees F in the thigh, 30 to 40 minutes.
  • Meanwhile, heat the remaining 2 teaspoons vegetable oil in a saucepan over medium heat. Add 3 teaspoons ginger, the garlic and the remaining 1/2 teaspoon five-spice powder and cook 2 minutes. Add the hoisin sauce, 1 tablespoon vinegar and 3 teaspoons honey; cook 1 minute. Remove from the heat and add 1 teaspoon sesame oil.
  • Toss the cucumbers with the remaining 1 tablespoon vinegar, 1/2 teaspoon honey, 1/4 teaspoon each sesame oil and ginger, and salt to taste. Top the chicken with the sauce. Serve with the cucumbers.

Place chicken in a freezer bag and seal. Pushing out as much air as possible. Allow sauce to cool and place in its own freezer bag. Place both bags inside one large bag, seal, label and freeze. To serve: Thaw in fridge. Cook as directed in recipe. The cooked chicken can be frozen as well. Just allow to cool, then place in a freezer bag."
