This is a wonderful fruit cake. It is my friend's secret family recipe, after I tasted it I begged and begged for the recipe. After a couple of years of having me beg, she finally relented and gave me this recipe. It is many years old so there were not packaged and chopped fruit available. It was a lot of work to make. I'm putting it here so I don't lose it.

3 cups dried apples
1 1/2 cups sugar
2/3 cup salad oil
2 eggs
2 1/2 cups flour
1 teaspoon cinnamon
1/2 teaspoon allspice
1 1/2 teaspoons baking soda
1/2 teaspoon nutmeg
1/2-1 cup nuts (walnuts are best)
1 (6 ounce) jar cherries
1 1/2 dates
3/4 lb pitted dates

Steps:

  • Pour sugar on apples in large bowl, let stand at least 25 mins or overnight. Add salad oil, eggs. Stir well. Sift dry ingredients together and onto apple mixture. Add nuts, dates, cherries. Pour into well greased and floured angel food cake pan. Bake at 325 for 1 3/4 to 2 hours.

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking dish.

3 cups unbleached all-purpose flour
2 tablespoons wheat germ (optional)
1/2 teaspoon salt
1 tablespoon baking powder
6 small Rome, Granny Smith, Yellow Delicious, or other low-moisture apples
Juice of 1/2 lemon
4 large eggs
1 cup vegetable oil
2 cups sugar
1 tablespoon vanilla extract
1/2 cup orange juice
1 teaspoon cinnamon

Steps:

  • Preheat the oven to 350°. Grease and flour a 9-inch springform pan.
  • Mix the flour, wheat germ, salt, and baking powder in a bowl and set aside.
  • Peel, core, and slice the apples into eighths and place in another bowl. Sprinkle with lemon juice.
  • In a third bowl, beat the eggs until foamy. Add the vegetable oil and 1 3/4 cups of the sugar; beat well. Stir in the vanilla.
  • To the egg mixture; alternately add the dry ingredients and the orange juice. Pour half the batter into the prepared pan. Cover with half the sliced apples.
  • In a small bowl, mix the remaining 1/4 cup sugar with the cinnamon and sprinkle half over the apples. Cover with the remaining batter.

  • Put some aluminum foil on the bottom of the oven in case the batter leaks. Bake the cake on the middle rack for 1 1/4 hours, or until a toothpick inserted in the center comes out clean. Cool on a rack before you carefully remove the cake from the pan.

3/4 cup canola or safflower oil
1/2 cup light brown sugar (tightly packed)
1/2 cup honey
2 eggs
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 cup peeled grated apples, like Granny Smith
1 large orange, optional
1/4 cup amber maple syrup
1/3 cup confectioner's sugar

Steps:

  • Make the cake: Heat the oven to 350 degrees. Grease a 10-inch cake pan and place a silicone sheet or parchment paper on the bottom. (You can substitute a 10-inch spring-form pan, as long as it is tightly sealed at the bottom.)
  • With a handheld or electric mixer, combine the oil, brown sugar, honey, eggs and vanilla in a large bowl.
  • In a separate bowl, sift the flour, baking soda, salt and cinnamon. Add half the sifted dry ingredients to the liquid mixture, and mix on a low speed until combined.
