Roasted Yams with Crème Fraîche and Chives image

A thoroughly modern take on the classic baked potato with sour cream.

Provided by Suzanne Tracht

Yield Makes 4 servings

Number Of Ingredients 7

4 small to medium-size yams (red-skinned sweet potatoes)
1 1/2 tablespoons canola oil
3/4 teaspoon coarse kosher salt
3/4 teaspoon ground black pepper
Fleur de sel*
Crème fraîche or sour cream
Chopped fresh chives

Steps:

  • Preheat oven to 350°F. Place yams in large bowl. Add oil, kosher salt, and pepper. Toss to coat. Transfer yams to rimmed baking sheet; drizzle with any remaining oil mixture. Bake until tender, about 45 minutes.
  • Using sharp knife, slit yams lengthwise down center. Press ends together, forcing potato open. Sprinkle each with fleur de sel. Spoon in dollop of crème fraîche, sprinkle with chives and pepper, and serve.
  • *A delicately flavored sea salt; available at some supermarkets and at specialty foods stores.

Tips:

  • Choose the right yams: Select firm, plump yams with smooth, unblemished skin. Avoid any yams that have soft spots or cuts.
  • Prick the yams: Before baking, use a fork to prick the yams all over. This will help them cook evenly and prevent them from bursting.
  • Coat the yams in oil: Rub the yams with olive oil or melted butter before baking. This will help them brown and crisp up.
  • Season the yams: Sprinkle the yams with salt, pepper, and any other desired seasonings before baking. You can also add a touch of brown sugar or honey for a sweeter flavor.
  • Bake the yams at a high temperature: Bake the yams at 400 degrees Fahrenheit for 45 minutes to an hour, or until they are tender when pierced with a fork.
  • Baste the yams: Baste the yams with melted butter or oil every 15 minutes while they are baking. This will help them stay moist and flavorful.
  • Serve the yams hot: Serve the yams immediately after they are done baking. They can be enjoyed on their own or with a variety of toppings, such as butter, sour cream, or maple syrup.

Conclusion:

Holiday basted yams are a delicious and easy-to-make side dish that is perfect for any special occasion. With their sweet and savory flavor, these yams are sure to be a hit with everyone at your table. So next time you're looking for a festive and flavorful side dish, give holiday basted yams a try.
