1 (9 inch) pie crust, baked
⅓ cup butter
½ cup chopped pecans
⅓ cup packed brown sugar
1 (5 ounce) package instant vanilla pudding mix
3 cups milk
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Heat butter or margarine with brown sugar and nuts in a saucepan until melted. Spread in the bottom of the baked pie shell. Bake at 450 degrees F (230 degrees C) for 5 minutes. Cool.
  • Prepare vanilla pudding mix with milk as directed for a pie; cool for 5 minutes, stirring occasionally. Measure 1 cup, cover with waxed paper, and chill thoroughly. Pour remainder into pie shell. Chill.
  • Fold 1/3 cup whipped topping into the 1 cup reserved pudding. Spread over nuts in pie shell. Chill. Garnish with remaining whipped topping and chopped pecans.

Spiced Holiday Pralines image

Living in the South, Elizabeth Choinski has seen plenty of pralines in her time, flavored with the likes of chocolate and coffee. But she had never come upon pralines imbued with the classic spice flavors of the holidays. So she made her own, mixing cloves and cinnamon into the pot. The resulting pralines are superb: aromatic, creamy as they melt in your mouth, then crunchy from the nuts.

Number Of Ingredients 8

400 grams granulated sugar (2 cups)
1/2 cup Steen's cane syrup or light molasses
230 grams pecan halves (2 cups)
4 tablespoons unsalted butter
1 tablespoon vanilla extract
5 grams ground ginger (1 teaspoon)
5 grams ground cinnamon (1 teaspoon)
2 grams ground cloves (1/2 teaspoon)

Steps:

  • In a saucepan, combine sugar, cane syrup, pecans and 1/2 cup water. Stir over medium heat until sugar dissolves and mixture comes to a boil. Cook, stirring occasionally, until mixture reaches 235 degrees on a candy thermometer.
  • Remove saucepan from heat and immediately stir in butter, vanilla extract and spices. Allow mixture to cool for 10 minutes.
  • Carefully using a hand-held mixer, or a standing mixer fitted with the paddle attachment, whip until mixture changes to a lighter color and becomes creamy and just starts to stiffen as it cools (it should still be warm). The pecans will break up a bit.
  • Use a tablespoon-size cookie dough scoop to drop mixture onto two parchment-paper-lined baking sheets (12 pralines on each sheet). Use a spatula to flatten each praline. Let cool completely and store in a tin, creating separate layers with wax paper.

1/4 cup margarine or butter
1/4 cup light corn syrup
1/2 cup semi-sweet chocolate chips
2 cups Cocoa Rice Krispies® or Rice Krispies®
4 (3-ounce) packages cream cheese, softened
3/4 cup sugar
2 tablespoons brandy
1/2 cup quartered maraschino cherry, drained
1/2 cup chopped almond
2 1/4 cups frozen whipped topping, thawed
halved maraschino cherry, drained (optional)
slivered almond, toasted (optional)

Steps:

  • 1. In 2-quart saucepan, melt margarine, corn syrup and chocolate morsels together over low heat, stirring constantly until smooth. Remove from heat. Add KELLOGG'S RICE KRISPIES cereal, stirring until well coated. With back of spoon, shape mixture evenly in bottom and on side of 9-inch pie pan coated with cooking spray, to form crust. Chill.2. In large mixing bowl, beat cream cheese until smooth. Gradually beat in sugar. Stir in brandy. Fold in cherries, almonds and whipped topping. Spoon filling into chilled crust. Garnish with additional maraschino cherry halves and toasted slivered almonds, if desired. Freeze at least 4 hours. NOTE: For easier cutting, let stand at room temperature about 15 minutes before serving.
