We had them in a quaint little restaurant in a village called Taxco. These are just like them! It makes a lot, but you won't believe how quickly you'll go through them!!

4 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cold butter, can sub butter-flavored crisco
1 1/2 cups water
salt

Steps:

  • In large bowl, combine flour, baking soda and salt.
  • Cut in butter til crumbly.
  • Add water, stir just until mixed.
  • Turn dough out onto lightly floured surface and knead til thoroughly mixed. About 3 minutes.
  • Roll out dough, a fourth at a time, on well-floured surface to 1/8" thickness.
  • Cut into 2" squares.
  • Place 1" apart on ungreased cookie sheets.
  • Prick 2 or 3 times with a fork, then sprinkle with salt.
  • Bake in preheated 350º oven for 20-25 minutes or til lightly browned.

4 cups all-purpose flour
1 tablespoon baking powder
1/4 cup unsalted butter
1 1/3 cup milk (you can substitute non dairy milk if you need to)
coarse salt (for sprinkling)
1 egg white (OR egg yolk. The whites make them crisper.)
1 tablespoon water

Steps:

  • Blend the egg white with the water to make an egg wash. Set aside.
  • Mix together the flour and baking powder.
  • If you are adding seasonings mix those in with the dry ingredients.
  • Cut butter into flour mixture until it forms coarse crumbs.
  • Add the milk and knead gently to form a ball.
  • Divide in 4 parts and roll out paper thin on a floured surface. The thinner they are the crisper they will be.
  • Cut the dough into squares or desired shapes. (a pizza wheel works great for that!)
  • Place on an ungreased cookie sheet and prick all over with a fork.
  • Brush with the egg wash and sprinkle with salt (or cracked pepper ..or..)
  • Bake at 325 until golden brown..about 15- 20 minutes. (check after 10 minutes)
  • Let cool before serving. They crisp as they cool.

2 cups all-purpose flour, plus more for dusting
1 teaspoon salt
2 teaspoons sugar
2 tablespoons cold unsalted butter, cut in pieces
3/4 cup milk
Coarse salt, for sprinkling

Steps:

  • Preheat oven to 325 degrees. In the bowl of a food processor, pulse flour, salt, and sugar until combined. Add butter pieces, and pulse until mixture resembles coarse meal. With the machine running, gradually add milk; process until dough comes together. Cover dough with plastic wrap, and allow to relax at room temperature for 15 to 20 minutes.
  • Unwrap dough, and transfer it to a lightly floured surface. Roll into 17 1/2-by-17 1/2-inch square, 1/16 inch thick (if dough continues to spring back, allow to relax again, covered with plastic wrap, for another 10 minutes). Sprinkle dough lightly with coarse salt. Gently press salt into dough with the rolling pin.
  • Using a knife or pizza cutter, cut dough into 2 1/2-inch squares. With a thin spatula, transfer to ungreased baking sheets. Liberally pierce with fork. Bake for 20 to 25 minutes, until lightly browned and crisp, rotating baking sheets if needed for even cooking. Let cool on wire rack. Keep crackers in an airtight container, at room temperature, about 1 week.

  • Using a hand mixer or standing mixer, combine cheese, butter, and salt in a large bowl.
