  • In a medium saucepan, whisk together the cocoa powder and sugar until blended. Add the water and 1/4 teaspoon of the salt, and whisk over medium heat until boiling, stirring constantly.
  • Continue boiling until mixture thickens, about 3 minutes. The mixture will still be fairly thin (it thickens to a syrup-like consistency once cool). Taste and stir in additional salt until dissolved, up to 1/4 teaspoon, if desired.
  • Remove from heat and stir in the vanilla. Cool. Taste again. If it's not sweet enough for you, add a bit more sugar and stir in the warm syrup until dissolved.

1 cup milk
2 cups sugar (I use organic cane sugar)
1/8 teaspoon salt (I use kosher salt)

Steps:

  • Whisk cocoa powder and milk together thoroughly in a large saucepan.
  • Heat and whisk to dissolve the cocoa. (I use medium-low heat).
  • Add the sugar and stir/whisk to dissolve. Be sure the sugar has dissolved before continuing on, so your syrup is not grainy.
  • Bring to a boil and boil for 3 minutes. Be sure to watch this VERY carefully. Mine has a tendency to want to boil over immediately, so I have to continuously take it on and off of the burner.
  • Remove from heat and stir in salt and vanilla extract.
  • Let cool completely and skim off any skin that may have formed.
  • Pour into a clean/sterile jar with a spout and store covered in the refrigerator.

Mai tai recipes call for a seldom-employed artificial almond syrup called orgeat, or orzata, depending on whether you're buying the faux-French version or the faux-Italian one. The problem is that faux-ness. Though orgeat is conceptually tethered to tiki, its twisted history predates tiki's by a long stretch. Orge is the French for "barley," and orgeat, orzata or, in Spanish, horchata, originally referred to a common method of making barley water, a nourishing drink, by crushing the grain in a mortar and pestle and adding water to it to emulsify the fats. Along the line, almonds were added to the mix, and eventually the humble grain got shoved out in favor of the rich and aromatic nut.

1 1/2 pounds sugar (1/2 demerara, 1/2 white)

  • Combine almonds with 11 ounces of water in a blender and blend briefly until uniformly but roughly chopped. Pour into a nonreactive bowl and add one liter of boiling water. Pour in the mixture and allow it to filter through, assisting with a wooden spoon if necessary. Discard cheesecloth and pulp. Place emulsion mixture in a pan, add sugar and heat mildly through (140 degrees or less), stirring until sugar is fully dissolved. Remove from heat and allow to cool to room temperature. Add orange-flower water and almond extract and funnel into a clean, capped bottle to refrigerate. Optionally you may add 2 or 3 ounces of vodka to the syrup, as a preservative.

Mango-Papaya Brown Butter Cinnamon Crepes with Homemade Dulce de Leche Syrup image

One 14-ounce can sweetened condensed milk
12 tablespoons unsalted butter
1/4 teaspoon ground cinnamon, plus more for garnish
1 cup all-purpose flour
1/4 teaspoon fine sea salt
1 cup milk
1/2 cup lukewarm water
4 large eggs, lightly beaten
1/2 vanilla bean, seeds scraped
2 ripe mangoes, peeled, pitted and sliced or diced
1 papaya, peeled, pitted and sliced or diced
1 cup very cold heavy cream
3 tablespoons sour cream
1 teaspoon vanilla extract

Steps:

  • For the dulce de leche syrup: Preheat the oven to 425 degrees F. Scrape the condensed milk into an 8-inch baking dish and cover the top tightly with heavy-duty aluminum foil. Place the dish inside a roasting pan and fill the pan with enough water to come halfway up the sides of the baking dish. Bake in the oven until the milk turns a deep golden brown, stirring a few times, about 1 hour 15 minutes. Check after 45 minutes and add more water, if needed, to the roasting pan. Remove the dulce from the oven and let cool, covered, about 15 minutes before serving.
  • For the crepes: Melt 6 tablespoons butter in a small saucepan over medium heat until it turns a nutty brown color. Remove from the heat, whisk in the cinnamon and let cool slightly.
  • Put the flour and salt in a medium bowl. Whisk together the milk, water and eggs until combined. Add the egg mixture to the flour and whisk until just combined. Whisk in 4 tablespoons of the brown butter and reserve the remaining 2 tablespoons for the crepe pan. Cover with plastic wrap and refrigerate for at least 30 minutes and up to 24 hours.
  • Mash the remaining 6 tablespoons butter and the vanilla seeds with a mortar and pestle. In a saute pan over medium heat, add the vanilla butter, mangoes and papaya and cook until softened and slightly caramelized, 3 to 5 minutes.
  • Whip the heavy cream, sour cream and vanilla extract in a large bowl until soft peaks form. Cover and keep chilled until ready to use.
  • Heat an 8-inch or 10-inch nonstick pan over medium heat. Brush with some of the remaining brown butter. Add a scant 1/4 cup of the batter into the pan and swirl the pan to cover the bottom with a very thin coating. If there is excess batter, pour it back into the bowl. Cook until the crepe bubbles and the bottom is lightly browned, about 1 1/2 minutes. Flip the crepe over and cook for about 20 seconds. Slide the crepe onto a plate. Repeat with the remaining batter.
  • Put a line of fruit down the center of each crepe. Spread a little of the warm dulce de leche on top of the fruit and fold or roll the sides of the crepe over. Top with a dollop of whipped cream and sprinkle with cinnamon.
