2 tablespoons sugar
1 teaspoon salt
1-1/4 cups cold unsalted butter, cubed
1/3 cup cold water
FILLING:
4 tablespoons unsalted butter
5 pounds medium Honeycrisp apples, peeled and sliced 1/4-in. thick
1/2 cup sugar
1/4 cup packed dark brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon grated lemon zest
1/2 cup apple cider
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 large egg yolk
1 tablespoon heavy whipping cream
Coarse sugar

Steps:

  • For the crust, pulse flour, sugar and salt in a food processor until blended. Add butter; pulse until butter is the size of peas. While processing, add just enough ice water to form moist crumbs. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or overnight., For the filling, melt butter in a Dutch oven over medium heat. Add apples and next 6 ingredients; stir to combine. Cook, covered, stirring occasionally, until apples have softened and released their juices, 10-12 minutes. With a slotted spoon, transfer apple slices to a 15x10-in. baking pan; spread into a single layer. Add cider to remaining liquid in Dutch oven and bring to a boil; cook until juices reduce to 1/2 cup, 10-12 minutes. Remove from heat; add lemon juice and vanilla extract. Pour over apple slices; cool completely. (Filling can be made 24 hours in advance and refrigerated.), Preheat oven to 425°. Adjust oven rack to lowest position; place foil on rack to catch any spills. On a lightly floured surface, roll half of dough to a 1/8-in.-thick circle; transfer to a deep dish 9-in. pie plate. Trim pastry to within 1/2-in. of rim. Add filling. Roll remaining dough to a 1/8-in.-thick circle; place over filling. Trim, seal and flute edge. Cut slits in top. Whisk together egg yolk and cream; brush top of pie. Sprinkle with coarse sugar. Chill 15 minutes., Bake 20 minutes. Reduce oven setting to 350°. Bake until crust is golden brown and filling bubbly, 40-50 minutes longer. Cool on a wire rack.

3 Golden Delicious apples, peeled and cored (about 1 1/4 pounds)
4 Granny Smith apples, peeled and cored (about 1 1/2 pounds)
1/2 cup honey
6 thyme branches
1/4 cup unsalted butter (1/2 stick), cut into small pieces
2 tablespoons instant tapioca
1/3 cup light brown sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
Flour, for dusting
Dough for 2 9-inch pie crusts (see recipe)

Steps:

  • Preheat oven to 425 degrees. Slice Golden Delicious apples and 3 Granny Smith apples into sixths.
  • In a large skillet over medium-high heat, bring 1/4 cup honey to a boil. Let simmer about 2 minutes, until honey is caramelized. Add 3 thyme branches. Arrange half the apples in a single layer in skillet. Sprinkle 2 tablespoons butter over apples. Cook apples, turning, until well caramelized on all sides (but not cooked through), about 10 minutes. Scrape apples and honey mixture into a bowl. Add tapioca and toss to combine. Repeat cooking process with remaining honey, thyme, butter and sliced apples. Add second batch of apples to bowl; combine. Discard all thyme branches.
  • Thinly slice remaining Granny Smith apple and add it to bowl. Stir in sugar, ginger and salt.
  • On a lightly floured surface, roll out both crusts to 12-inch circles. Place one crust in 9-inch pie plate. Scrape apple filling into crust and top with remaining crust. Pinch edges to seal. With a knife, slice 4 vents in top of crust. Place pie on a foil-lined, rimmed baking sheet.

2 3/4 cups all-purpose flour, divided, plus more for rolling
1 1/4 teaspoon salt, divided
1/3 cup plus 1 1/2 tablespoons granulated sugar, divided
2 sticks (16 tablespoons) unsalted butter, cut into small pieces and frozen for 15 minutes
1 tablespoon apple cider vinegar, chilled
1 large egg
1 tablespoon whole milk
3 1/2 pounds Honeycrisp, Braeburn, or Golden Delicious apples, or a mix
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons lemon juice
Coarse sugar, for sprinkling

9-inch pie pan

Steps:

  • In the bowl of a food processor, pulse 2 1/2 cups flour, 1 teaspoon salt, and 1 1/2 tablespoons sugar. Add butter and pulse until coarse, pea-sized crumbs appear, about 10 seconds. With the machine running, add vinegar and 1/4 cup ice water and process until the dough just holds together, about 30 seconds. Squeeze a small amount of dough between your fingers and if it is very crumbly, add more ice water, 1 tablespoon at a time (2 tablespoons maximum). Do not over process.
  • Turn dough out onto a lightly floured surface and push together into a rough ball. Knead a few times to combine, then divide into two equal balls. Flatten each ball into a disc with smooth edges (no cracks), cover with plastic wrap, and refrigerate at least 1 hour (or up to overnight).
  • Preheat the oven to 425°F with one rack on the bottom rung and one rack in the center of oven. Place a rimmed baking sheet on the bottom rack to preheat.
  • On a lightly floured surface, roll out one disc of dough into a 13-inch round. Roll the dough loosely around the rolling pin, and then unfurl it into the 9-inch pie pan.
