4 cups rolled oats
1 cup sliced almonds
1 cup chopped pecans
1 cup raw sunflower seeds
⅓ cup canola oil
½ cup honey
1 teaspoon vanilla extract
1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a large bowl, stir oats, nuts and sunflower kernels together. In a separate bowl, mix together oil, honey, vanilla and cinnamon. Add to dry ingredients; mix well. Spread mixture onto two ungreased baking sheets.
  • Bake in preheated oven, for 10 minutes, remove from oven and stir. Return to oven and continue baking until golden, about 10 minutes. Remove from oven and let cool completely before storing.

4 cups rolled oats
2 cups raisins
1 1/2 cups coconut
1/2 cup honey
1/2 cup butter
2 teaspoons cinnamon
1 teaspoon vanilla
1 dash salt

Steps:

  • Combine oats, raisins and coconut in a large bowl; mix well and set aside.
  • Combine honey, butter, cinnamon, vanilla and salt in a microwave proof bowl and cook in microwave until butter and honey are melted.
  • Stir together then pour over oat mixture and toss until well blended.
  • Spread on a lightly greased cookie sheet.
  • Bake at 350 degrees for 20 minutes or until lightly golden.
  • It will darken a little when it cools.
  • Stir half way through.
  • Remove and let cool.

1 cup hulled (green) pumpkin seeds (not roasted; 5 oz)
1/2 cup hulled sunflower seeds (not roasted; 2 1/2 oz)
1 teaspoon salt
3/4 cup vegetable oil
3/4 cup pure maple syrup
1/3 cup crystallized ginger (2 1/2 oz; optional), finely chopped
2 cups dried apricots (11 oz), finely chopped
Accompaniments: plain yogurt or milk; honey or maple syrup
Special equipment: an electric coffee/spice grinder

Steps:

  • Preheat oven to 350°F.
  • Finely grind flaxseeds in coffee/spice grinder, then stir together with oats, almonds, pumpkin seeds, sunflower seeds, salt, oil, and syrup in a large bowl.

3 cups old fashioned oats
1/2 cup shredded coconut (sweetened or unsweetened)
1 cup nuts, chopped (I like a mixture of almonds, pecans, cashews, and sunflower seeds)
1/2-1 teaspoon cinnamon (I use 1 teaspoon)
1/4 teaspoon salt
2 tablespoons vegetable oil
3 tablespoons honey
3 tablespoons maple syrup
1 cup dried fruit (I like a mixture of cranberries, raisins, chopped apples and apricots)

Steps:

  • Preheat oven to 300 degrees.
  • Line a baking sheet with parchment paper.
  • Combine rolled oats, coconut, nuts, cinnamon, and salt.
  • In a separate bowl stir together oil, maple syrup and honey.
  • Pour liquid mixture over the dry ingredients and stir together.
  • Spread onto the prepared baking sheet and bake for approx 20-25 minutes (stirring occasionally).
  • The longer you bake it the crunchier the granola will be. It may still be sticky when it comes out of the oven, but it will become crisp and dry as it cools.
