1/2 cup honey (cranberry honey preferred, if available)
1-1/2 teaspoons dry mustard
1 teaspoon lemon juice
1 large Granny Smith apple, peeled, finely chopped (about 1-1/2 cups)
1 cup cranberry juice cocktail
1 package (6 ounces) sweetened dried cranberries (about 1-1/3 cups)
2 tablespoons Orange Marmalade
1/4 cup chopped pecans

Steps:

  • 1. Remove and discard glaze packet from ham or reserve for another use. Begin by preparing ham according to package directions.
  • 2. Make Honey Glaze: While baking, mix honey, mustard and lemon juice in small bowl until blended. Set aside until the last 30 minutes of baking time.

1 boneless country ham
2 cups honey, for glazing ham
2 tablespoons Toasted Spice Rub, recipe follows
1 tablespoon thyme, chopped fine
6 celery stalks
1/4 cup fennel seeds
1 tablespoon coriander seeds
1 tablespoon peppercorns
1 1/2 teaspoons red pepper flakes
1/4 cup (1-ounce) pure California sweet chili powder*
2 tablespoons kosher salt
2 tablespoons ground cinnamon

Steps:

  • Preheat oven to 425 degrees F.
  • Place ham on an open brown paper bag for easy clean up. With the tip of a paring knife carefully score a 1-inch grid pattern around the outside of the ham. Brush the entire surface of the meat on all sides with some of the honey.
  • Season the entire surface of the meat on all sides with the toasted spice rub and thyme. Add about a half cup of water to the base of the roaster. Place ham on several celery sticks in the roasting pan.
  • Cook for 1 hour. Every 15 minutes, baste ham with juices that collect in the base of the roaster and the honey. Let rest for 15 minutes before carving as desired.
  • Toast the fennel seeds, coriander seeds, and peppercorns in a small, heavy pan over medium heat. (Toasting freshens spices, releases their oils, and makes them more fragrant, as well as adding a new dimension of flavor.) When the fennel turns light brown, work quickly. Turn on the exhaust fan; add the red pepper flakes, and toss, toss, toss, always under the fan. Immediately turn the spice mixture out onto a plate to cool. Put in a blender with the sweet chili powder, salt, and cinnamon and blend until the spices are evenly ground.
  • If you have a small spice mill blender or a coffee grinder dedicated to grinding spices, grind only the fennel, coriander, pepper, and chili flakes. Pour into a bowl and toss with the remaining ingredients. Keep the spice mix in a glass jar in a cool, dry place, or freeze.
  • *Chef's Tip: Taste your chili powder and, if spicy and hot, cut back the amount. California chiles are almost sweet, not hot.

1/2 cup sugar
2 cups dried tart cherries or dried Bing cherries or 1 cup of each (about 10 ounces total)
3/4 cup pecans, toasted, chopped (about 3 ounces)
2 tablespoons grated orange peel
1 6- to 8-pound spiral-cut honey-roasted ham or one 12- to 14-pound honey-roasted turkey

1 1/2 kg boneless turkey breast, fresh
1 sprig fresh rosemary
1/3 cup margarine, butter flavored
1/3 cup honey
1/3 cup white wine
pepper, to taste

Steps:

  • Place the turkey breast in a shallow roasting pan.
  • In a medium sauce pan, combine remaining ingredients and gently simmer for 3-5 minutes, allowing the flavor from the sprig on rosemary (I used one that was about 5 inches long) to infuse into the sauce. Remove and keep the sprig of rosemary.
  • If you have an injector, inject about 1/2 of the wine/butter/honey mixture into the breast in several locations. Drizzle another 1/4 of the mixture on top of the breast. Season with pepper. I do not use salt because it can draw out some of the moisture of the turkey and it really doesn't need it.
  • If you don't have an injector, just pour about 1/2 of the mixture on the breast and then season with pepper.
  • Place the sprig of rosemary across the top of the breast.
  • Place in an oven preheated to 325 f until the turkey reaches an internal temperature of 160. This took our oven about 2 hours but keep a close eye on it so you don't dry it into turkey jerkey instead of turkey breast. At about 45 minutes, baste it with some of the remaining butter/wine/honey mixture. At 1hour and 15 minutes start basting it every 30 minutes with the juices from the pan.
  • Remove at 160 degrees, discard the rosemary, and wrap the breast in foil for at least 15 minutes but will stay warm for much longer.

Steps:

  • Prepare and heat ham according to package directions.
  • Meanwhile, prepare glaze. Mix honey with dry mustard and lemon juice in bowl; set aside.

2 tablespoons red wine vinegar

  • Place the cherries in a saucepan with the water, bring to a boil, cover and remove from heat. Set aside for one hour.
