Time 25m

Yield 4 cups

Number Of Ingredients 8

4 cups assorted unsalted roasted mixed nuts
1/3 cup honey
1/3 cup light corn syrup
1/2 cup sugar
1 tablespoon salt
1 1/2 teaspoons ground cumin
1 1/2 teaspoons chili powder
1/2 teaspoon ground cayenne pepper

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350.
  • Spread the nuts on a large rimmed baking sheet. Bake just until the nuts are warm to the touch, about 3 minutes. Remove baking sheet from oven. Drizzle nuts with honey and corn syrup, and mix well. Continue baking, stirring often with oiled spatula (I used Pam) until the liquid has evaporated into a glaze, about 10-12 minutes.
  • Mix the sugar, salt, cumin, chili powder and cayenne pepper in a large bowl. Add the nuts and mix well to coat them with the spiced sugar. Transfer to a clean baking sheet to cool, breaking up the nuts that may have stuck together. They will crisp as they cool.

Number Of Ingredients 6

5 cups of raw nuts
4 tablespoons butter
4 tablespoons real maple syrup
2 tablespoons crushed dried rosemary
1/4-1/2 teaspoon cayenne pepper (depending on how spicy you like things)
2 teaspoons salt

Steps:

  • In a large skillet or Dutch oven, toast the nuts over medium heat, stirring frequently so that they don't burn.

  • When the nuts are toasted (when the vast majority have darkened spots), pour the butter mixture over the nuts and toss to coat.
  • Spread the glazed nuts out on a silpat or parchment lined cookie sheet (makes for far easier clean up) and roast in a 350 degree oven for 15-20 minutes, depending on your desired level of roast.
  • When you take the nuts out of the oven, sprinkle the salt over the top, so that it adheres to the still-sticky nuts.

HONEY & ROSEMARY FRIED CHICKEN

Honey & Rosemary Fried Chicken image

I loved the light, crispy batter and the combination of flavors--there is something very appealing about the combination of garlic and honey! There wasn't enough flour or buttermilk to coat 3-4 pounds of chicken. From article about fried chicken in Taste of the South magazine--featured restaurant, Julep, Jackson, Mississippi (http://juleprestaurant.com/menu_latenite.htm)

Provided by SharleneW

Categories     Chicken

Time 44m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 (3 -4 lb) chicken, cut into 8 to 10 pieces or 3 lbs chicken pieces
1 -1 1/2 cup all-purpose flour
1 tablespoon garlic powder
1 tablespoon salt (or less!)
1 tablespoon white pepper
1 cup buttermilk
peanut oil (for frying)
3/4 cup honey
1 tablespoon butter
1 sprig rosemary, chopped

Steps:

  • Wash chicken and pat dry.
  • Mix flour with garlic powder, salt, and pepper.
  • Dip chicken in seasoned flour, then buttermilk, then seasoned flour again. Set aside.
  • In a large skillet, heat oil to 325°F over medium-high heat. Add chicken, skin-side down, beginning with the dark meat. Keeping oil at 325°F, cook each side for 5 to 6 minutes covered and then 5 to 6 minutes uncovered, for a total cooking time of 20 to 24 minutes. Drain chicken on a wire rack.
  • To serve, drizzle Honey Rosemary Glaze over chicken, if desired.
  • For Honey Rosemary Glaze: In a small saucepan, combine honey, butter, and rosemary. Cook over low heat on stovetop until butter has melted. Stir to combine.
  • Chef's note: Use more flour to offset salt. Also, be sure you only "warm" honey--don't let it get hot enough to boil! I used chicken tenders (see photo).

Tips:

  • Use fresh rosemary for the best flavor. If you don't have fresh rosemary, you can use 1 teaspoon of dried rosemary.
  • Don't overcrowd the pan when roasting the nuts. This will prevent them from cooking evenly.
  • Roast the nuts until they are golden brown and fragrant. This will take about 10-12 minutes.
  • Toss the nuts with the honey glaze while they are still warm. This will help the glaze to stick to the nuts.
  • Let the nuts cool completely before storing them. This will help them to stay crispy.

Conclusion:

Honey rosemary glazed nuts are a delicious and easy-to-make snack. They are perfect for parties, potlucks, or just to enjoy at home. With just a few simple ingredients, you can create a flavorful and addictive treat that everyone will love. These nuts are also a great gift idea. They are sure to be appreciated by friends, family, and co-workers. So next time you are looking for a quick and easy snack or gift, give honey rosemary glazed nuts a try. You won't be disappointed.
