¼ cup butter, softened
¼ cup white sugar
¾ cup honey
2 eggs
½ cup buttermilk
½ teaspoon vanilla extract
2 cups all-purpose flour
1 tablespoon baking powder
¼ teaspoon salt
¾ cup heavy cream
2 tablespoons confectioners' sugar
1 pint strawberries, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan or line with paper baking cups.
  • In a medium bowl, beat the butter and sugar with an electric mixer until light and fluffy. Mix in the honey, eggs, buttermilk and vanilla. Combine the flour, baking powder and salt; stir into the batter just until blended. Spoon the batter into the prepared cups, dividing evenly.
  • Bake in the preheated oven until the tops spring back when lightly pressed, 20 to 25 minutes. Cool in the pan set over a wire rack. When cool, arrange the cupcakes on a serving platter.
  • Whip the heavy cream in a chilled bowl using an electric mixer until stiff enough to hold a peak. Sweeten with confectioners' sugar if desired. Spoon on top of cupcakes and top each one with sliced strawberries right before serving.

1 lb large ripe strawberry, rinsed and patted dry
8 ounces strained Greek yogurt (or regular yogurt strained in a cheesecloth- lined strainer overnight in refrigerator)
1 1/2 tablespoons honey (or more)
1/2 vanilla bean, seeds scraped from pod
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract
lightly toasted sliced almonds, for garnish (optional)

Steps:

  • Using a paring knife, cut the tops off of the strawberries. Using the tip of the knife, cut a wedge-shaped well in the top of the strawberries.
  • In a small bowl combine the yogurt, honey, vanilla bean seeds, vanilla and almond extracts and stir until completely combined. Taste and adjust the sweetness by adding more honey if necessary.
  • Using a small spoon or piping bag, fill the wells in the strawberries with some of the yogurt mixture. Top with a few of the sliced almonds and serve.

1/2 teaspoon grated lemon rind
2 tablespoons lemon juice
2 cups fresh strawberries, whole halved

Steps:

  • Mix together honey, lemon rind and juice; let stand for at least 30 minutes.
  • Spoon halved strawberries into dessert dishes. Pour over sauce.
