1 whole chicken, cut into 8 pieces
1 tablespoon kosher salt
1 cup buttermilk
¼ cup pickle brine
2 tablespoons Louisiana-style hot sauce
1 large egg
2 cups all-purpose flour
2 teaspoons fine table salt
¼ cup butter
¼ cup lard
2 tablespoons cayenne pepper
1 tablespoon packed light brown sugar
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 cup vegetable oil for frying, or as needed

Steps:

  • Toss chicken pieces with 1 tablespoon kosher salt. Transfer chicken to a bowl; cover and refrigerate overnight.
  • Whisk buttermilk, pickle brine, hot sauce, and egg together in a mixing bowl. Pour marinade over chicken and stir to ensure each piece is thoroughly coated. Cover and let chicken marinate in refrigerator 2 to 4 hours.

1-1/2 teaspoons minced fresh rosemary or .4 teaspoon dried rosemary, crushed
1-1/2 teaspoons rubbed sage
3/4 teaspoon salt

4 boneless skinless chicken breast halves (1-1/2 pounds)
2 tablespoons olive oil, divided
20 garlic cloves, halved lengthwise
1/2 cup chopped onion
1/4 teaspoon crushed red pepper flakes
1/4 cup white wine or reduced-sodium chicken broth
1-1/4 cups reduced-sodium chicken broth
1 tablespoon butter, melted
3 tablespoons minced fresh parsley

1 (8 ounce) can sliced water chestnuts, drained
1/2 cup fresh broccoli florets, separated into small pieces
1/2 cup carrot, sliced diagonally
5 garlic cloves, thinly sliced

3/4 cup rice wine
1/4 cup chili paste (optional)

1 tablespoon cornflour

  • Separate garlic cloves and peel. Pat chicken pieces dry and season with salt and pepper.
  • In a 12-inch flameproof casserole or heavy skillet with a lid heat oil over moderately high heat until hot but not smoking and brown chicken in batches, without crowding, transferring to a bowl. Pour off fat from casserole or skillet. In casserole or skillet arrange chicken, skin sides up, in one layer. Add Cognac and heat over moderately low heat until warm.
