1 1/2 lbs ground beef
3/4 cup uncooked rice
2 cups water
1 medium onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
4 tablespoons soy sauce
2 cups celery, chopped
2 tablespoons Worcestershire sauce
1 bag chow mein noodles

Steps:

  • Cook ground beef until brown.
  • Add onion and celery, cook until almost tender.
  • Add remaining ingredients except chow mein noodles.
  • Put into a two quart casserole dish.
  • Cover and bake at 350 degrees for one hour and fifteen minutes.
  • Uncover and layer with chow mein noodles.
  • Return to oven, uncovered and bake until noodles are brown, about 15 minutes.

Use store brand soups, you'll never notice a difference, and because you drain and rinse the meat, you can use cheaper ground beef if you like! 1 lb ground turkey or 1 lb ground beef
2 stalks celery, sliced thin
1/4 Spanish onion, diced small
1 can cream of chicken soup
1 can chicken and rice soup
1 can sliced mushrooms, with juice (stems & pieces is fine)
3 tablespoons soy sauce
1 bag chow mein noodles (the crispy ones)

Steps:

  • Brown the ground meat along with the celery and onions.
  • Drain and rinse then combine in a casserole dish with the remaining ingredients, add the noodles last.
  • Bake at 350 degrees for approximately 20-25 minutes until heated through.
  • Serve with sticky white rice and a salad.

24 -30 large tomatoes
1 cup hot pepper
4 large onions
1 1/2 cups sugar
1 1/2 cups white vinegar
2 tablespoons allspice
4 tablespoons salt

Steps:

  • Peel and chop tomatoes and put into a large stock pot.
  • Chop peppers and onions and put into pot.
  • Add remaining ingredients and bring to a boil, stirring pretty often.
  • Cook on med heat until thick, approximately 45 minutes to an hour.
  • Put into prepared canning jars.
  • Making sure rims of jars are completely clean, place lids and rings onto jars and process in hot water bath for 5 minutes.

1 large cabbage, finely shredded
1 large onion, finely chopped
6 hot banana peppers, finely chopped
1 large bell pepper, finely chopped
1 tablespoon crushed red pepper flakes
1 large carrot, finely chopped
5 cups cider vinegar
water
2 cups sugar
1/8 cup salt

Steps:

  • Finely chop or shred all ingredients.
  • Put cabbage in very large pot and boil until soft.
  • Add remaining ingredients except vinegar and sugar and boil an additional 30 minutes.
  • Drain off about half of the liquid.
  • Add vinegar and sugar, simmer for 30 minutes.
  • Drain off 1/3 of the liquid before serving.

4 T ground mustard
1 T ground turmeric
1 T ground ginger
4 T mustard seed
3 T celery seed
2 T mixed whole spices
2-3 Qts apple cider vinegar

  • Mix chopped vegetables. Sprinkle over them 1/2 cup salt (I use a non-iodized product) and let stand overnight. The next day, drain the mixture well. Tie the spices in a cheese cloth or clean cotton square. Add sugar and spices to vinegar and bring just to a boil then simmer for about 20 minutes. Add the vegetables and other ingredients. Bring to a simmer again and cook just until hot throughout. Pack into hot jars and seal at once.
