  • In a large skillet add the sauerkraut. Place hot dogs on top of the kraut.

4 potatoes
3 cups sauerkraut
4 frankfurters

Steps:

  • Boil peeled potatoes (cut in quarters) until tender but not mushy. Drain, and add to the pan the amount of sauerkraut for the number of people you've planned to feed. Also add hot dogs cut into 1 inch pieces. Heat everything, but watch carefully to avoid burning. Add butter if desired. We always ate this with mustard for the sauerkraut and hot dogs.
  • The next day my mother would heat leftovers in a frying pan, letting the sauerkraut get brown.

12 top split hot dog buns
yellow mustard
1 can(s) canned or refrigerated sauerkraut
1 bag(s) 8 oz shredded cheese, cheddar or any type
celery salt
1/2 c sliced green onions

  • 1. Toast the sides of the buns on a grill or griddle with a little butter.
  • 2. Then grill hot dogs.
  • 3. Place a little mustard along the inside of each bun and put the hot dog inside.
  • 4. Line them up in a long casserole side by side.
  • 5. Top each one with a little celery salt, more mustard, and sauerkraut (well drained).
  • 6. Top with cheese and green onions.
  • 7. Bake at 350 degrees uncovered for about 15 minutes and serve.

Frank's kraut
your favorite bun or flat bread
FOR THE BLACK BEANS
19 oz can black beans - drained
1 large onion - sliced
2 clove garlic - chopped
3 vine ripe tomatoes - diced
1/4 c Italian parsley - chopped
1/2 large jalapeño - diced with or without seeds
1/2 tsp salt
1/2 tsp black pepper
1 tsp ground cumin
1/2 tsp turmeric
2 - 3 Tbsp olive oil

Steps:

  • 1. Heat a medium sized frying pan with olive oil. Add the garlic, onions, tomatoes and jalapeño and sauté until the onion is softened and the garlic is fragrant.
  • 2. Add the beans, parsley and the seasonings and sauté until the beans are heated.
  • 3. Heat the Frank's Kraut in a saucepot.
  • 4. Cook the hot dogs as desired; grilled or boiled.
  • 5. Plate the flat bread topped with Frank's Kraut next the beans and finally the hot dog. Garnish with mustard or your favorite condiment.
