DULCE DE LECHE APPLE PIE

I made this recipe as an experiment at Thanksgiving Dinner. I've had requests for it ever since. Like a caramel pie, but not too sweet, it's wonderful warm or cold. And excellent for breakfast the next day!

Tips:

  • For the best flavor, use firm, tart apples that hold their shape well when cooked, such as Granny Smith, Honeycrisp, or Braeburn.
  • If you don't have apple cider, you can substitute apple juice or water.
  • Be careful not to overcook the apples, or they will become mushy. They should be tender but still slightly firm.
  • The dulce de leche ice cream can be made ahead of time and stored in the freezer for up to 2 weeks.
