Provided by Ree Drummond : Food Network

Time 2h15m

Yield 12 servings

Number Of Ingredients 22

3 pounds ground beef (I used ground round)
2 pounds sausage
3 tablespoons olive oil
2 large yellow onions, diced
2 green bell peppers, seeded and diced
6 cloves garlic, minced
1 cup white wine or stock (your choice)
Two 28-ounce cans crushed tomatoes
One 24-ounce jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
One 15-ounce can crushed tomatoes
One 6-ounce can tomato paste
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon ground oregano
1 teaspoon ground thyme
1/4 teaspoon crushed red pepper, optional
4 bay leaves
1/4 cup finely minced fresh parsley or 3 tablespoons parsley flakes, plus more for serving
1 whole rind from 1 wedge Parmesan, optional
1/2 cup grated Parmesan, optional, plus more for serving
2 pounds spaghetti, cooked al dente and tossed with olive oil, for serving
Garlic-cheese bread, for serving

Steps:

  • In a large pot over medium-high heat, brown the ground beef and sausage until totally browned. Remove the meat from the pot with a slotted spoon and put it into a bowl. Set aside.
  • Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the onions and bell peppers. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
  • Pour in the wine and allow it to bubble up and reduce for about 1 1/2 minutes. Add the crushed tomatoes, marinara sauce and tomato paste. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper if using and bay leaves. Stir, and then add the cooked ground beef and sausage and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
  • After an hour, add the minced parsley and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
  • Serve a big bowl of oiled noodles and the meat sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.

QUICK AND SIMPLE MEAT SAUCE

Quick and Simple Meat Sauce image

This is a quick and delicious meal that I made up and make for my boys and they LOVE it! I like using Rao's Marinara Sauce that you can find in just about any food store but use whatever marinara sauce you like! I like to put lots of veggies in too. Use whatever veggies you and your family like.

Provided by J_Krebs2

Categories     One Dish Meal

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 11

1 lb ground beef
1/2 red onion, diced
4 garlic cloves, minced
1 bell pepper, any color, diced
4 ounces cremini mushrooms, roughly chopped
1 zucchini, roughly chopped
1/4 teaspoon crushed red pepper flakes (optional)
12 ounces rao's marinara sauce, half a jar
1 lb pasta, any kind
salt and pepper, to taste
parmigiano (optional)

Steps:

  • Heat large, deep sided pan on medium to medium high heat.
  • Coat bottom of pan with a couple tablespoons of extra virgin olive oil.
  • Heat a large pot of water on high until boiling for the pasta.
  • Once the oil starts to ripple but before it starts smoking, dump in the onions, mushrooms and red pepper flakes. Stir the pan occasionally.
  • Once the onions start to soften and the mushrooms brown (about 5-7 minutes), season with salt and stir the pan.
  • Now add the bell pepper and zucchini and stir the pan occasionally.
  • Once the pepper and zucchini begin to soften, add in the garlic and season again with salt continuing to stir the pan occasionally.
  • At this point, the pot of water should be boiling. Season the water liberally with salt and add the pasta. Cook to al dente.
  • Once the garlic is very fragrant, stir in the ground beef and break it up into little pieces.
  • Continue to cook until meat is browned all the way through.
  • Stir in the marinara sauce. It will be pretty thick, so add in about 1/2 cup of pasta water to thin.
  • Bring sauce to a boil, then cover, reduce heat and let simmer for about 10 minutes, stirring occasionally.
  • Drain the pasta and put in bowls.
  • Once the sauce is done, pour over the pasta and then add some parmigiano cheese if you'd like!

Tips:

  • Choose the right meat: Use a combination of ground beef, pork, and/or veal for a rich and flavorful sauce. Grass-fed or organic meats can also add a depth of flavor.
  • Brown the meat properly: Browning the meat is essential to develop flavor and color. Cook the meat over medium-high heat until it is browned on all sides.
  • Use a variety of vegetables: A combination of vegetables (such as onions, carrots, celery, and bell peppers) will add sweetness, texture, and nutrients to the sauce.
  • Choose the right tomatoes: Canned whole tomatoes are a convenient option, but fresh tomatoes can also be used. If using fresh tomatoes, peel and dice them before adding them to the sauce.
  • Season the sauce well: A good sauce has a balance of flavors. Use a combination of salt, pepper, garlic, oregano, basil, and thyme to create a flavorful sauce.
  • Simmer the sauce: Simmering the sauce for at least 30 minutes allows the flavors to meld and develop. The longer you simmer the sauce, the better it will taste.
  • Serve the sauce over your favorite pasta: Meat sauce is a classic pasta sauce. Serve it over spaghetti, penne, or your favorite pasta shape.

Conclusion:

Making a simple meat sauce is a great way to create a delicious and flavorful meal. With a few simple ingredients and a little time, you can create a sauce that will be enjoyed by family and friends alike.
