My mother-in-law gave me this recipe some 15 years ago. I've made well over 100 batches since then!-Susan Marie Taccone, Erie, Pennsylvania

Yield 4 cups.

Number Of Ingredients 4

1/4 cup butter
2-1/2 cups whole unblanched almonds
1 cup sugar
1 teaspoon vanilla extract

Steps:

  • In a heavy saucepan, melt butter over medium-high heat. Add almonds and sugar. Cook and stir constantly for 7-8 minutes or until syrup is golden brown. Remove from the heat; stir in vanilla. , Immediately drop by clusters or separate almonds on a greased pan. Cool. Store in an airtight container.

These are so good that you won't be able to stop eating them. So very easy to make. You could use a different kind of nut,but then they wouldn't be called "Iced Almonds" HA HA This recipe was another of my Mom's recipes.Never a Christmas without them. Brings back great memories with the family.

1 c whole blanched almonds
1/2 c sugar
2 Tbsp butter or margarine (not lite)
1/2 tsp vanilla
3/4 tsp salt

Steps:

  • 1. In a heavy skillet,combine 1st 3 ingredients. Heat and stir over medium heat,until almonds are toasted and the sugar is a golden brown syrup.(about 15 min.)Stir in vanilla.
  • 2. Spread almonds on foil; sprinkle with salt. Cool. Break into 2-3 nut clusters.
  • 3. Store in a airtight container in a cool dry place.
